had a nice batch for eats this evening. what is everyones favorite recipe for gills? i either fry them in butter and lemon or light breading and deep fry them in oil. then drench with lemon!

filet the rascals, bread in Zatarain's Fish Fry batter and deep fry to golden brown.. Zatarain claims their batter is complete,but I like to salt my filets before dredging them in the coating..goes great with hushpuppies and fried tators and onions!

Scale 'em, head 'em, gut em', lightly salt em', shake 'em in flour, fry 'em, in a black iron pan with bacon grease. No finer eatin' on the planet :grin:
