Looking for a good Squirrle recipe...

Not a stew though.

I like pan fried legs but I seem to hit and miss with them being tender...any pointers?

Before you shoot them climb up the tree and feel to see if they are young and tender or old and tough. :D  All kidding aside that seems to be the way it is, we always fried the young squirrels and cooked the old tough ones in a pot of home made noodles.  A quick way of frying them is to oven fry them using the recipe on the Bisquick box for chicken.

boil the hell out of them , pour off water add celery soup or such and cook until tender !
now if you want to eat lean pour over rice , but if ya want something to stick to your ribs pour over biscuits , saving one to sop up left overs , oh yea season to taste !
and no it don't taste like chicken !

I throw them in the crock pit with some water and onion soup mix. In 3 or 4 hours, when they are about to fall off the bone, I flour and fry them. Sometimes there ain't none left to fry. lol

Sometimes I fry them, then make some milk gravy real thin (use less flour), put them back in the too thin gravy to slow cook covered for a long time until the gravy thickens just right. Fry the squirrel slow with a lid on.

sorry , i don't consider it a stew , just do it to soften !
grand maw used to boil the hell out of um them boil them some more , then pour off the water , put bacon grease in the bottom of the pot , bread the squirrel parts and fry in the bottom of the pot ! since ya fried um forget the rice go straight to biscuits and boiled potatoes ! use lots of butter on both !

If you like 'em pan fried, it doesn't matter how tough or otherwise they may be to start with, just toss 'em in a pressure cooker for 8-10 min. first. Take 'em out, pat 'em dry and then fry 'em up. They'll be plenty tender. The older ones still may be a bit stringy, but they will be tender.

If you don't have a pressure cooker, you can just boil them prior to frying. It works just as well, but takes quite a bit longer. 20 - 30 mins.

good day to all. crock pot till the meat comes off the bone. discard all bones and water. put in pan and put BBQ sauce or other favorite seasoning or marinade. I like Italian salad dressing. good hunting........Bill

I tried a new recipe yesterday, and the squirrels came out fantastic.  These were older squirrels with big "cajones" on them, if you know what I mean.  I knew they would be tough.  I took a roaster pan[with lid], and put a can of beer, cup of cider vinegar, and a dash of liquid smoke int eh bottom of the pan.  I put a rack over the liquid to lay the squirrels on.

I took the squirrel pieces and put a dry rub all over them.  Next I wrapped each piece in bacon, and placed on the rack.  I put the lid on and put them in the oven at 210 degrees for almost 5 hrs.  Took them out, and the meat fell off the bone.  Took the bacon and squirrel meat, threw them in a pan and put BBQ sauce on all, and heated up.  My son and I found out that 2 squirrels wasn't enough! ;D  Prep time was about 15 minutes, and those were the tenderest squirrels I have ever had!

Clean and skin the squirrels.  Slice salt pork thin and fry until crisp, then remove in large cast iron pan.  Oil should be about 1/4 to 3/8 deep in the pan.  Dredge squirrell in flour, and brown in hot oil, remove squirrel.  Add flour to oil to make a rue. (add butter if not enough oil)  Add 1/2 cup whiskey and enough 1/2 &1/2 to make gravy, season with pepper(you won't need salt)  Put squirrel in large baking pot, cover with gravy, sprinkle on diced up crisp salt pork, cover with tight fitting lid and cook in 350* oven for a bout 90 minutes.  Serve squirrel whole with biscuits, mashed potatoes and a salad.  Try not to overeat.
