Clean and skin the squirrels. Slice salt pork thin and fry until crisp, then remove in large cast iron pan. Oil should be about 1/4 to 3/8 deep in the pan. Dredge squirrell in flour, and brown in hot oil, remove squirrel. Add flour to oil to make a rue. (add butter if not enough oil) Add 1/2 cup whiskey and enough 1/2 &1/2 to make gravy, season with pepper(you won't need salt) Put squirrel in large baking pot, cover with gravy, sprinkle on diced up crisp salt pork, cover with tight fitting lid and cook in 350* oven for a bout 90 minutes. Serve squirrel whole with biscuits, mashed potatoes and a salad. Try not to overeat.
