baked fish recipes

anybody got any got recipes for baked catfish  or bout any kind of fish they wish to share?

I'm by no means a catfish expert but I have cooked a lot of halibut, cod, and other mild white fleshed ocean fish. I'd first try putting it on foil, sprinkling with Johnnies Seafood Seasoning, add a little butter, onion slices, maybe a splash of white wine or lemon juice, close up the foil and bake at about 350 until it just flakes - be careful not to over cook.

We had a platter full of baked walleye and bass last weekend. The fish were on the large side and sometimes gamey tasting. So before baking we place the well rinsed fillets in a cake pan and cover them entirely with milk.
Then put the pan of milk covered fillets in the refrigerator over night. This adds a fresh clean taste to any recipe.

That milk trick works great with deer also, but back to the fish thing. I do like Dand, tinfoil, butter, lemon juice and some fresh ground pepper. It adds to the flavor without killing it.

i tried the tinfoil and lemon and pepper on the grill, that was pretty good. then tried one where yu dip in milk and bread with cornmeal and bake at 425 degrees, that was really good. im going to work on perfecting that one. my son loved it and i liked it too. just almost as good as fried without the mess and smell in the house.

Try this one. In a sheet of heavy duty foil place a good handful of fresh spinach. Place your fish on top of the spinach then pour about 3 TBS marsala wine over the fish and a drizzle of sesame oil and a little sea salt and white pepper to taste. Close foil packet tightly and bake at 375 until fish is flaky.
