What Are You Having For Dinner?
« on: March 15, 2008, 08:26:09 AM »
Around here we tend to be more on the bland side with a Meatloaf, Roast, along with fried Chicken or a ham. Staples tend to be Mashed potatoes (gravy of course) and a green bean or corn casserole. Fish can also be a favorite especially when that ice breaks and there is Crappie & Walleye to be caught. A timely favorite that goes with the Fish is when those Morel Mushrooms Start popping up. A good old fashioned favorite is ham & beans which everyone seems to enjoy.

Not too long after this we get those tomatoes right out of our garden along with green beans and new potatoes. They are a great compliment to go with the venison taken last fall along with the Hamburgers/Hotdogs/Steaks that come off my old Weber Charcoal grill.

Did I mention that I like to eat

Meatloaf, green beans, mashed potatoes, and cornbread.  The meatloaf is in the oven now, baking.

For my meatloaf I use two pounds of ground Caribou meat, two eggs, one packet of Lipton Onion Soup mix, one packet of Meatloaf seasoning, and half a cup of oats.  The purpose of the eggs and oats are to hold the meat together, since there is no fat in Caribou it just crumbles with out something to hold it together.

Last night we had the last of our Halibut.  The only fish left in the freezer now is Salmon.  Yuck, I hate Salmon.

And for Breakfast this morning we are having Homemade Biscuits, Hashbrowns from our own potato garden, and Sausage made from Caribou and Black Bear.

I take a spring Black Bear every year and then mix it with 25% Caribou and make breakfast sausage.

Mule, meaning backstrap of mule deer, marinated, with onions, and mushrooms.  I'll open a can of green beans and bake a couple of potatoes.

As the wife left for a day with the daughter and granddaughter she said dinner is up to me.

Pinto beans & cornbread mmmmm  I grew up on those. My mom could feed A family of 9 for  about $5.  $6 if there was a hambone in
the pot. I cant get my wife & kids to eat it. Best I can do is use them for chili.

Dale:  Check out this link.  http://www.signonsandiego.com/uniontrib/20061230/news_lz1n30nowread.html

P.S.  That older mule deer is a little bit chewy, not a bad flavor but needs a little time in the crock pot.  Cooked it as a stir fry the other night, and had left overs for lunch.  Not bad!
