Anyone have any favorite recipies or marinades for rabbit?

fill a crock pot with quartered rabbit.   add mushrooms.   add a pound of bacon.  1 onion.   and 1 or 2 cups water.   turn it on and let it go on low setting for 6 hours.   when you pick up a piece and the meat falls off the bone,  she is read to eat.

Check this one out...it's one of our favorites!

Fried Rabbit

Ingredients:

3 tbsp. milk
1 ounce flour
1/4 tsp. salt
1/4 tsp. black pepper
1 (4 lb.) rabbit, cut into serving pieces
1 egg, lightly beaten with 1 tsp. water
3 ounces fresh breadcrumbs
Oil
4 parsley sprigs

Place milk in one bowl and mix together flour, salt and pepper in another. Dip rabbit in milk then flour mixture, coating thoroughly. Set aside for 10 minutes. Combine egg and water in one bowl and breadcrumbs in another. Dip rabbit first in egg mixture, then in breadcrumbs, coating thoroughly. Fill a large frying pan 1/3 full with oil. Set over moderate heat until it reaches 360 degrees. Fry the rabbit pieces for 20 minutes or until tender when pierced with a fork. Remove from pan and drain on paper towels. Arrange on a serving dish and garnish with parsley sprigs.

last time i cooked rabbit i soaked it over night in salt water.then placed it in a loaf pan over sliced potatoes.covered the rabbit with a few slices of bacon sprinkled salt and spices over it.covered with foil and tossed in the oven(300-350 degrees) for i think it was 30 minutes or so ,removed foil and baked another 15 minutes or so.

RABBIT WITH WHISKEY-STYLE BARBECUE SAUCE

2 rabbits, quartered
3 T Chef’s Grill Plus
Salt to taste
Black pepper to taste
1 cup onion, chopped
1/3 cup bell pepper, chopped
1/3 cup celery, chopped
1/3 cup parsley, chopped
1/3 cup canola oil
1 T garlic, chopped
1/4 cup Worcestershire sauce
1 jalapeno diced
2 cups ketchup
1/2 cup cilantro, chopped
1 T cumin
4 oz. George Dickel Tennessee Whisky No.12 make sure you have plenty more to sample through out the cooking to ensure the freshness of it..a good 4 cuber glass works well.

WHISKEY-STYLE BARBECUE SAUCE PROCEDURE: Heat the canola oil in a sauce pot and sauté the onions, bell pepper, celery and garlic for 10 minutes. Add the ketchup, Worcestershire sauce, parsley, cilantro, jalapeno, cumin, George Dickel and season to taste with salt and black pepper. Remove the barbecue sauce and set aside.

GRILLED RABBIT PROCEDURE: Preheat a grill surface. Brush the rabbit pieces with Chef’s Grill Plus. Grill the rabbit pieces, brushing with barbecue sauce during the cooking process. Remove the cooked rabbit from the grill and serve with additional barbecue sauce. Serves 4.
