Alabama style chicken stew

Alabama style chicken stew

list of ingredients
six skinless leg quarters or twelve skinless chicken thighs (bone in preferred)
two softball sized onions (diced fine)
1 lb of frozen baby lima beans
six or so large russett potatoes (peeled and cubed)
large can of diced or crushed tomatoes
can of whole kernal corn
small can of tomato sauce (optional)
1 teaspoon of white pepper
1 tablespoon of black pepper
1 teaspoon of onion salt
1 tablespoon of powdered garlic
1 tablespoon of McCormicks seasoned salt
sea salt to taste


cover chicken pieces with water in a large pot and boil with the diced onions till the chicken is falling from bone.
Remove chicken pieces from broth and allow to cool.  In the chicken and onion broth add the potatoes and frozen baby limas.  Add dry seasoning at this point.
When chicken has cooled, remove meat from bones and add back to pot.  When limas are done and potatoes are soft, add the whole kernal corn (liquid too)and the tomatoes(liquid too).  (If a more tomato taste is wanted add the tomato sauce at this time).  Season to taste.. One may want to add more of any of the listed spices .
Traditionally served with corn bread and a couple shakes of hot sauce.  All of my family in north Alabama ( in and around Florence) has a family favorite chicken stew recipe, sorta like spaghetti.

We have a soup and sandwich at Bible Study on Wednesday nights.  I need another recipe to try out on the group.  Next week is spoken for but I should be able to let you know something in about two to three weeks.

Chill dude!   ;D  I just printed it out and may try it tonight!  I'll be sure to let you know, but it sounds right hearty!   :P

Well I picked up the make-ins on the way home.  Soons I get outa this tie I'll start puttin it together.  But what's this about you bein' in Mississippi?   ???  I thought this was 'bama stew!   :o  Heck, since it's MS stew I'll have to go out and start pickin up road kill to use instead of chicken!   ::)   Not to mention a little truck patch raiding... ;D

Nah, that just pre cooks them... saves par boilin'!   ;D

The stew came out real good!  Thick, colorfull and very tasty!   :P  I thought it was a little heavy on the pepper, but my wife didn't think so.  About the only thing I'd do differently is cut the chicken into chunks.  I left the meat as it came off the bone and it turned into long strands of chicken.   :-[

I'ma fixin to get me a bowl of it right now!  Sure wish I'd made some corn bread though...   ;)

Atlaw, I'm glad you enjoyed it...works really well on those cold and dreary days that I am looking so forward to!  about the temps and roadkill, works out good if one is looking for jerky!!!

that recipe sounds awesum, im going to try it and throw in a couple diced turnips and use fresh maters diced also.heck and a few chopped green beans, gotta use what yu got.

I finally got to fixing the stew for Bible Study.  I backed off on the spices a little, since there was a variety of tastes to consider. I set the condiments on the table, so people could adjust the taste to suit themselves.  I also made two cornbreads to go with the stew, and there was less than 1/4 of one left.  The nine of us left enough stew to fill four quart bags, and two of those went home with some of the members.  Dessert was a banana pudding.  Some of the best cooks in the church attend this Bible Study, so I saw it as a compliment that they took the stew home. 

I have spent several days in New York attending a wedding.  Fixing this stew and some Mississippi style cornbread cleansed my soul of that Yankee exposure.  Thanks for posting this recipe.
