Eating Carp

A few of us are considering cooking a few carp even tough they don't have a good reputation around here as table fare.  We live on a very clean lake so if they will be from really clean water.  Any ideas as tohow to prepare them?  And, I've already heard the one about cooking on a plank and eating the plank.

I've steamed/baked a couple of them in tin foil before.  The meat flakes really nicely, and makes pretty good "fish cakes".
That's the only way I have fixed them.

I have heard of folks cold smoking them...but I've never tried it.

One guy told me to cut into the fillet about every 1/4".  Then make sure you fry at 360 degrees as this then softens the bones so you can just eat them like with canned salmon.  One guy wants to smoke a couple, but this guy said it would not be hot enough to soften the bones.

There is a resturant in Omaha, Nebraska (Joe Tess' Place) and their main dish is carp. It is scored and deep fat fried. The small bones sort of get cooked away, but the large rib bones are still there. The following web site has a review on the place and a photo of their famous carp sandwich. It is a chunk of carp setting on a peice of rye bread.

I think they are great and the people who like their carp really like it. The people who don't like it, really don't like it.

Carp got its name a long time ago by someone who ate it but couldn't spell   :)


Actually, when I was a kid we would have it smoked and canned. No matter what you did, it was still just plain bad.  Good luck.

I've pressure cooked it and then made "carp cakes" out of it. Bread crumbs, diced onion and bell pepper, an egg or two. fry like a salmon patty.
Not bad, but I wouldn't rate it in the top 10% of my favorite meals either.

I always thought you had to cut the dark streak out, or do you mean just don't cut into it?

I use to do alot of carp bowfishing. I would fillet the meat off the spine and rib bones, trim the dark meat out without cutting it directly. then brine it for several hours or overnite, rinse, then either fry it, or smoke it.
 The bones in the lower back section would basically fall out like the bones in a fiddler catfish.
