I like the "the simplier the better" recipes.  Gut and dehead the trout..pat dry with paper towels.  Srinkle inside with a small amount of season salt.  Place a small pat of butter in cavity.  Wrap tightly in aluminum foil and bake at 325 degrees for about 20-25 minutes depending on size of trout.  It is done with flesh flakes easily with fork.

the best rainbow trout I ever ate where cleaned. rolled in jiffy corn muffin mix and fried in an army mess kit frying pan in bacon grease over hot coals, along with a couple morals. But things just tast better when you are out camping ;D

yes the kiss principle is the way with rainbows.  Don't overcook. Fillet larger fish >14 in fry smaller fish just headed and gutted - scaled too if you like to eat the skin. Roll in pancake mix, bisquick, whatever, a little salt pepper, maybe lemon pepper, or Lowry's Seasoning salt. Fry quickly in light oil, butter, or a touch of bacon grease. Fish is done when flesh just flakes.

Wrap headed and gutted fish in heavy duty foil after putting a pat of butter and moderate shake of Lowry's seasoning salt.  Place right in the fire or on good coals for about 15 min depending on fire and size of fish.  Better not to over do it. Tastes great on  the lake or river bank.

I cook mine like spinafish does except I leave the heads on. Just gut and I use garlic salt and lemon pepper. Regards

Used to do them like Dand does. Just wrap in foil with butter and salt, throw in coals about 10 min. eat.

If you use bacon grease, which I do when out camping, I like the stuff from apple smoked bacon. ;D

I like to take trout and stuff them with Crab meat. I make a crab stuffing and season the trout stuff it and fry in butter and finnish in the broiler. Just heaven!

Salt, pepper and dried dill and pan fry, bake or grill. Serve with usual fried fish pairing. Slaw, Hush Puppies, fries. Also can add dill to tarter sauce rather than catchup.
