If the ring slots aren't the same on each gun, and I assume you have weaver type bases, I don't see any reason to spend any extra cash for quick release rings.
Quick release rings in your case would only give you the advantage of allowing you to remove the scope without the use of tool before you had to get out a screwdriver or allen wrench to loosen one of the rings and move it to properly fit the other base (which would give those who lap rings for alignment, fits). If you're going to do that, you'd be best served by getting the Burris Signature rings with the self-aligning insert in the ring.
Re-zeroing after each switch is a given and as Keith said, a boresite will get you on paper so you can re-zero but I seriously doubt that you'll be able to go directly to the 10 ring at 100 yds without sighters and adjustments.
Now if you went and got Picatinny style bases for each set up instead (they are available for both), I'd say you could do it and just have to keep track of the adjustments from gun to gun and quick release rings would make sense.
