My opinion is the best stage of tainting is this; chunks should be gray about half way through the chunk but pink yet in the center. Ground meat or fish should be the same, gray half way through and still pink in the center. I always taint products in April and May when the temperatures are still rather cool in my locality. A ball aprk figure is about 3 weeks to achieve the gray/pink color desired but can be from 2 to 4 weeks depending on the temperature. I can better control things when the weather is cool and burying such large amount that I deal with wouldn't be practical. Wacky brings up a good point about the bait beginning to work and continue to taint even after the sodium benzoate was added. This is something i've harped about in numerous postings, one should dissolve the sodium benzoate powder in water or some liquid before adding to the bait. If there is excess liquid once the bait is complete, pour it off into a bottle and use it as a lure. Dissolving in liquid allows the preservative to better and quicker permeate the entire chunks. Otherwise, one is always in danger of exploding the sealed bait/lure jars because gasses may be still forming. I have seen this happen even with experienced lure makers baits and lures. I couldn't help but smirki a little when I was at a convention years ago where a major lure makers lures were for sale. Trappers would walk up and start opening the lure bottles and they would spray in there faces or fizz over on their hands. It really wasn't funny and I felt sorry for the trappers but it was humerous and educational. Others bought the lures and baits, put them in their car trunks and they were exploding left and right within a few minutes of being in the hot trunk. I remember when I was a small kid, my Dad just got done bottleing lures and they fizzed out around the caps. We both learned a lesson right then and there about proper techniques of preserving. One more thing, I believe it takes a lot more sodium benzoate to ensure fish is done working than meats. I would double the amount in fish baits. Ace (P.S.
