Cajun Fried Turkey

I had to dig up this recipe for some friends. I have been using this one since 1983.


I have it to memory but to many people want it so I thought I would share it with my friends here.

Frying Turkey Brian Style

 

Ingredients:

 

1          12 to 16 Lb Thawed Turkey

4 to 5   Gallons of Peanut oil

1          Box of Crab Boil

Red Pepper (Cayenne)

Garlic Powder
Onion Powder

Salt

 

 

Boil crab boil in a medium sauce pan for 10 to 15 minutes.

Mix pre-mix ingredients together and then divide in half.

Pre-Mix Ingredients
4 Tablespoons Red Pepper (Cayenne)
4 Tablespoons Garlic Powder
1 to 1.5 Teaspoon Onion Powder
1 Tablespoon Salt

 

 

Take 6 to 8 ounces of water from the sauce pan (after boil) and mix with ½ of the pre-mix.

 

Inject the turkey with the liquid mixture. Pay particular attention to the Breast meat and the thigh meat. Then rub turkey on the outside with remaining pre-mix.

 

 

 

Note: I typically inject 1 full syringe in each thigh, and leg and a couple in each breast. Then I cover with foil and refrigerate overnight. It is recommended but not required.

 

The recommended practice is to fry the turkey for 3.5 minutes per pound at 350 degrees. (A 14 lb bird will take about 50 Minutes) Be prepared to go a little longer if your oil drops below 350 for very long. After the bird is out of the oil, cut into the thigh and check if it is red or not. If so go 5 to 10 minutes more.

 

I typically get the oil to around 375 to 400 before I SLOWLY place the bird into the oil.

 

 

 

Pre-Mix for 2 Turkeys

4 – Servings (two turkeys)

 

½ cup red pepper

½ cup Garlic Powder

2 Teaspoons Onion Powder

½ Tablespoon salt

Fried turkey is good stuff. Not the healthiest but mighty good. This is a good way to change up between Thanksgiving and Christmas.
