When I had my Encore in 25/06, I set them at whatever was listed in the manual as OAL, to start with. I moved them out, slowly until I got what was the best accurracy.
There are gauges out there, that'll help ya measure your chamber for different bullets, but for the life of me, I can't remember where I ssaw them listed. It may have been on Midways site.

I use 115 gr. Berger VLD bullets over Federal 210M primers and RL-22 in mine with great results on target and on deer.

As far as setting the length is concerned, screw the bullet seating die in gradually until the action closes easily with a snap and there are no scuff marks from the lands on the bullet.  This will put the bullet just off the lands.

What I do for my contender and Encore
I size a round and seat a Bullet just deep enough to hold
NO PRIMER/NO POWDER just brass bullet
I light a candle and smoke the bullet
I then carefully put it in the barrel trying not to mar up the smoke
I pull it from the barrel and inspect the smoke it usually is out to much (OAL)
I seat it a bit deeper and repeat(smoking) I do this till I see I am just hitting the lands
I check the OAL and write it down on my note for that barrel and I keep the dummy round in the die set box
it takes a little bit but when done you have the OAL
This will only change when if you change style of Bullets
Everything I own barrels and rifles have their own Dummy besides Me  ;D

Here is a simple way to find the OAL for any break action rifle.  First, put a bullet nose first in the chamber and tilt the barrel until the bullet touches the lands.  Next, use the stem on the bottom of a set of calibers and measure from the base of the bullet to the rear of the chamber. Then, remove the bullet and measure the OAL of the bullet itself.  Then, add the two numbers together. What you have now is the total OAL of the bullet at it's maximum length. You can now make precise depth adjustments from that measurement.  Anytime you switch bullets just measure the new bullet you're using because each bullet OAL is different.

Here's a simple tool from the H&R FAQs that anyone can make.  ;)
