As I remember at one time the boy scout handbook called this a one eyed jack. Even better at Mom's restraunt i learned to make them with large sourdough bread. Two slices sourdough buttered both sides, with a cookie cutter hole in each, drop on flattop till toasted one side, flip and stack toasted sides into middle, crack two eggs into center, flip when toasted on bottom, when eggs set medium slide onto plate, add grits, ham steak and red eye gravy. We sold the fool out of this on Sat. morning breakfast, Mom called it the Alabama plate. I started handling the Sat. morning flattop when I was 14, full grill at 16. About the most fun I ever had with my clothes on.
