That explains a lot about the texture and flavor of their hamburgers.

By the way, and on a serious note, "angus" is just a marketing term. It does not imply the quality of the beef in any way, as, for example, "USDA Prime" does. Angus meat can be just as vile as the mystery meat you got in grade school cafeteria when you were a kid.

We used to buy the kids chicken mcnuggets when they were little as an occasional treat. I have often wondered how they are made. They look like foam made of chicken meat. I can just picture whole chickens, still flapping, going into a big grinder. Yagggh!

That statement must have come from the City Slicker knowledge base!

As a kid in high school I worked on the ranches around home and such a statement would have gotten my ass kicked.

Angus is a breed of cattle.  In our area there were a number of breeds.  Shorthorns were not common.

There has always been a lot cross breeding of different cattle breeds in search of the ultimate beef producer, and an effort to create hardy animals.

So I have to lighten up a little.  What is the percentage of Angus DNA mixed into a lot of hamburger have to be?  Without a doubt Angus has become a marketing tool.  Maybe Jack has the answers.  I have noticed that some ads say pure Angus.  The producers have a lot of pride in the cattle they send to market.  Once the livestock is sold they no longer have control over it  Clearly food safety was not a priority of the Bush Administration, seems like everything produced in this country from peanut butter, to beef was recalled.  The bottomline was the basic inspection system was in name only.  It is a little early to determine if things will improve.  I guess we did get even with China by sending bad peanut butter to them.  But it also went to our school lunch program.  Smokenjoe5150 may have captured the flavor of the problem.

There was a time when we would select a steer for slaughter off the range and we knew what we were getting, and the butcher who cut it up.

Still in spite of the fact angus is a breed not all angus beef is REALLY angus beef. These days if the cow is black it sells as angus at least in some places as I have a friend who raises cattle and he says the black ones regardless of breed go at higher angus prices and then the meat sells as angus just cuz the hide was black.

Skunk I hope the discovery did not tickle the Richter Scale.  A good Crab Louie goes good with a rib steak.

The truth be known a major portion of hamburger and lower price beef comes from dairy cow breeds.  A lot of dairy cows are currently being butchered because of the over production of milk products and high cost.  I would not be surprised that a number of fast food chains utilize hamburger with dairy herd origins.

If you are born a little black and white calve you have a very short life span.  There is not a need for a lot of bulls in a herd.  When I was a kid you could go to the auction yard and buy a day old dairy bull for one dollar.  A one dollar calve would be quickly castrated.  Bulls need stronger fences and can be dangerous.  A family would have some very good meat in less than a year on a relatively small pasture.  Meat the family could not otherwise afford.

I realize that some people are sensitive to the subject of castration.  Back in the early 1950’s I was visiting my grandmother on the farm in what I call Northeastern Alabama.  From grandma’s farm we traveled to another farm with a lush green pasture with a bunch of white face Hereford on it.  Grandma pointed out the cows, and I said grandma they are steers.  I had upset Grandma and I was told that as long as I was in Alabama they were male cows, so be it.  The difference between a gentle Southern Lady and a wild kid from the West.

Graybeard’s friend is not an underhanded stockman selling just a cow as an Angus.  I found a webpage for Angus beef.  I copied some of the key elements in determining what makes an Angus.

2.1 Genotype. Cattle eligible for Angus influence beef programs based on genotype must have positive identification (ear tags, tattoos, brands, etc.) and be traceable back to provable (e.g.; registration papers) Angus parentage. Qualifying cattle must be traceable to one registered parent or two registered grandparents. Programs which claim a specified percentage of Angus heritage must use this method.
2.2 Phenotype. Cattle eligible for certification in Angus influence beef programs based on phenotype (appearance) must be predominately (51 percent) solid black. Blue roan, gray, etc., are not considered to be black or a percentage of black. Such variations can qualify only when it occupies 49 percent, or less, of the body area with the remaining 51 percent, or greater, being solid black. (1) Angus influence cattle may be either horned or polled. Carcasses of certified live animals which display certain non-Angus characteristics (e.g.; dairy conformation, Brahman humps) shall be excluded as specified in the carcass specifications for approved programs.
(1) At times, a black hair coat can become sun bleached and appear to be a shade of brown, particularly on the back. If the base of the hair close to the skin is black then that entire brown tipped area should be considered solid black. However, if the hair color is brown to the roots, it should be considered as brown in color and the area will not contribute to the 51 percent black requirement.
"Certified Angus Beef" (CAB) is a special industry designation developed in 1978 that involves standards for marbling, tenderness, age, and color. According to the National Cattleman's Beef Association, only about 8% of U.S. beef is entitled to the label "Certified Angus." Just because something is labeled "Angus" or "Black Angus" doesn't mean it's the same quality as "Certified Angus Beef." Angus beef is further differentiated by USDA grades such as "prime," "choice," and "select," giving us such labels as "Certified Angus Prime," indicating the best Certified Angus Beef.

That started before Bush.  I remember the big e coli outbreak that killed a bunch of hamburger eating kids about a year after Clinton took office (think it was Jack in the Box).

One of my all-time favorite court cases was due to anus burger.  A man had stolen a trailer loaded with 20,000 of frozen beef rectums.  To this day, I have no idea of what you would do with them (and, please, let me live in ignorance just a little longer).  When the cops caught up with him, they were laughing so hard, they could hardly arrest him.  He wanted to know what the joke was, so they let him in on the contents of the trailer.  The man blurted out,"I'm not going to prison for some beef a---------s!  The cops assured him that was exactly what was going to happen.  He was convicted and of course appealed, on the grounds that the cops' laughter entrapped him into making a confession before being informed of his rights.  The appellate judge ruled that any reasonable man would have found the situation funny, so the conviction stood.  See, sometimes justice is served!  You want fries with that? Or would you prefer to supersize?

too bad yuall folk dont know where yu beef comes from,i know where mine comes from. just picked mine up from the butcher  who is my neighbor and freind for many years.it was a grassfed crossbred angus heifer. just finished eatin sum of the tbones. dang they were good!out of one of my best cows, bout 900 lbs on the hoof.we had plenty of rain this year so grass was good all summer.
