Opinel Fillet Knives

These Opinel fillet knives are the cats meow.  The blades are sharp, and easy to keep that way. Also very flexible.  I did not expect much from these, but I can see them becoming my favorite fillet knives. Anybody else use these?

I work with a professional fish fillet person.  There are two more such businesses on our island.  All use Dexter Russell knives and sharpen them with F. D1CK hyper steel sharpeners.

I have a Dexter Russell, bought at a fish market many years ago. Another good, inexpensive knife. Don't care for the blade tip. I use it as a slicing knife.

I have half a dozen or so of their folding knives.
Very pleased with them. One of the few good things

I have an Opinel carbon folder..tremendous steel. The Dexter-Russells are great also.

I've been using thier knives fr about 20 years now, and I love all the Opinels. A number 7 or 8 is usually my edc, with a filley knife in my pack for use as a food knife or fishing knife. I have the 5 inch fillet knife, and its never let me down. To keep the wood from swelling and making them hard to open, I use mineral oil in the joints, or sometimes I'll even take a paper match torn frm a book and smeer vasoline in the pivot area, and wipe out the exsess. A friend of mine who is from France told me to do that, and it works. You can even wash them out in a creek after that, and thier fine.

Opinels are one of the best knives around.
Maximum minimalisim.
