We roasted a turkey for Christmas dinner. I thought I'd share some favorite ideas related to turkeys.

1) Turkey salad makes a great leftover. After the main meal I cleaned the meat off of the bones of the whole bird and we'll use that for a variety of meals. One of my favorites is turkey salad for sandwiches and salads. Just cut the turkey up into 1/2" to 3/4" chunks. Add some very finely minced red onion and celery. Add a bit of lemon juice or vinnaigrette for slight tartness. Add a little sugar for just a hint of sweetness. Add less mayonnaise than you think you need; just coat the meat. That's good in sandwiches. If you add roasted almond slivers and raisins it's a good salad served with lettuce and mandarin orange or pineapple or apple.

2) Stuffing: My recipe is to start with the bagged commercial stuffing flavored with sage. I use about three cups of it for four people. I then add to it six fried breakfast sausage links cut up into pieces the size of the stuffing pieces. Dice a granny smith apple. Dice an onion. Add plenty of black pepper. Add a small can of mushroom pieces (this is a case where canned is better than fresh, believe it or not.) And moisten it all with chicken broth. Mix it all up by hand and bake it uncovered at 400F for about 40 minutes. Even people who don't like stuffing like this stuff.

Got me a turkey the day before Christmas.Scared the hell out of the shoppers in the frozen food isle at Walmart.Slow

I love turkey just out of the oven or deep fat frier............but as far as I am concerned when the meal is over the rest can go in the trash.  I remember growing up when my Mom would fix the largest turkey she could find.   Along with that we usually had ham, maybe a roast goose or ducks and roast beef, she fixed for a large number of people.  With the number of side dishes there was always lots of leftob=ver turkey. We ate it until it was gone, I would get so tird of it I prayed for a Spam sandwich just to have something different for a change.  Today I tell my wife to fix as small a turkey as we can get by with and send all the leftovers home with the kids and grandkids.

rockabilly ..id just let the wife fix both turkey an a ham.. only don t let anyone know the ham is in the fridge..then you could eat ham an chees sands ,ham an this an ham an that for mabe a week or so....
 i could live with that now.. :D slim
