Putting together a 16" Encore in 308 Winchester.  Kind of interested ijn that length because I could put it on a rifle stock with a rifle scope for load development for heavier loads and then change to pistol grip and different scope for long range handgunning.

Was looking for a bigger game pistol than my 13" Contender 7-30 Waters.

Suggestions on bipods, loads, etc.?

Going with a Virgin Valley 16" SS matte finish witht eh varmint taper [very little taper...almost bull].  Thinking of a target wood forend with a bipod.

I live in NY where slug, ML and pistol are our only choices for deer firearms.  Oh yeah...16" is min per Federal law for rifles and max per NY for pistols.  Can you say "exactly" 16?
Be honest with yourself.  Can you guarantee you would hit a paper plate at 250 yards...100 yards...50 yards?  Then you have no business replacing the plate with a live animal.
