Anybody have a few good ways to Cook Tame Rabbit..   I Got 4 Nice  8 to 9lb Rabbits from a girl that rases them for market rabbit projects for 4-H..    Thought it would be something New..    I'm going to make a Pot Pie out of One. but Need more Ideas.  Any help You can Give??

here is my best recipe for rabbit.


dredge in flour and lightly brown in olive oil.   Put in backing crock with one large diced onion and one large can of mushrooms.  Add  chicken stock until meat is just covered, and add two tablespoons of lemon juice.  Cook at 450 degrees for an hour.  Serve over rice or mashed potatoes.

OK let me see if i remember right.

Brown cut up rabbit in black iron skillet with a little oil(just enough to keep the meat from sticking to much), when completely dark brown all over, add chopped onion and saute, after onion is clear add seasoning( mom always used red pepper salt and some fresh garlic) add bell pepper and some water. The water will simmer with the meat and onions and peppers and make gravy, (add a little water at a time) keep the liquid covering the meat and it will tenderize. cover and let simmer a while keeping liquid from evaporating by adding some periodically. Serve over Rice(my favorite) or mashed tators.

Now the browning part is critical, it must caramelize to make a rich gravy so dont add onions and water too soon, in fact just dont burn it but get it real close. meat may try to stick to bottom but its OK for some to stick, that's the gravy when it simmers in the water.

Its called Smothered rabbit, we used wild cotton tails but tame will do!

My favorite rabbit stew recipe. It's also really good with venison or caribou but use beef bouillon instead of chicken

RABBIT STEW

1-RABBIT, BONED AND CUT UP
WATER
1-TBS.-CHICKEN BOUILLON
3-MED.- POTATOES PEELED AND QUARTERED
4-5- CARROTS CHOPPED
3-4- STALKS OF CELERY CHOPPED
1- MED. - ONION CHOPPED
˝ TEASPOON- PEPPER
1-CAN- CONDENSED CREAM OF MUSHROOM SOUP (10-12 OZ.)
1 ˝ TBS.- CORN STARCH

COVER MEAT WITH  WATER, ADD BOUILLON, BRING TO A BOIL.
LOWER HEAT AND SIMMER FOR 1 HOUR.
SCRAPE OUT FOAM AND GREASE.
ADD VEGETABLES AND PEPPER.
SIMMER FOR 30 MINUTES.
REMOVE LIQUID FROM POT AND ADD OR REMOVE WATER TO MAKE IT EQUAL 2-CUPS AND RETURN TO POT.
COMBINE CREAM OF MUSHROOM SOUP WITH CORN STARCH IN SEPARATE BOWL, ADD TO POT.
STIR WHILE THICKENING AND SIMMER UNTIL HOT.

If they  are old brood rabbits it will help the muscles get tender if you cut all the way through the muscles in a place or two, even the backstraps. A guy that raised rabbits told me people baked the old brooders and that they were too tough for market rabbits. eddiegr

They are not Old Brood rabbits.   They are about 7 - 8 Months old.   I butchered them this Morn Very Nice Rabbits.     We have one in the crock pot slow cooking Now.    
I cut an Onion up and some celery added some water and a dash or two of lemon juice.  Used some seasoning salt , Black pepper, and some Garlic salt.  Have had it on High for about 5hrs Going to turn it on Low and let is simmer Over Night.
  Will pick the meat off the bones tomarrow Morning and Make MY pot Pie. Will use Tators , Carrots, Pies, and what ever else seems good . Will make Gravy on the side from the broth and drippings from the Crock pot. .  
YUM . the smell is Killing me .

Dredge in Flour, brown well mix up a can of Cream of Mushroom soup with a can of milk pour over the browned rabbits and simmer for about an hour and a half. Serve the rabbit and gravy over beef Rice A Roni.
99% of all Lawyers give the other 1% a bad name. What I find hilarious about this is they are such an arrogant bunch, that they all think they are in the 1%.

Just got done Taking the the meat of the bones.   It just fell off.  The meat is very tender and moist with a great taste.  Had to sample to be sure it was good. ;D 
 Going to let the Rabbit chill for a bit while the tators cook.  I hope this Pie is as good as I remember when Mom made it!
