DEE. Thanks, I'll try that next batch. I really enjoy them golden brown with just a bit of crusty texture. These won't live much longer, just had one for breakfast. Charlie.  ;D ;D

Well, I just finished a couple of sausage bisquits using the last two bisquits I made Saturday.  I've read a bunch of tips and such for making busquits and these last were the best I have ever made.   ;D  'course that ain't sayin much...  :-[

Anyway, I've stayed with Dee's recipe but I can't get them to rise as much as I would like and I don't think they are as light as they should be.   :-\  I've tried both self-rising and all purpose flower and it doesn't seem to make any difference.  Any other suggestions?

My next batch are going to be done in my new Dutch Oven Dan!   ;)

Richard to get them to rise like the restaurant boys biscuits, your gonna have to go the less healthy route most likely. I use a little olive oil, 2 cups of self rising flour, and a cup of milk. They don't stand up like the canned type, but they don't clog your arteries as fast either. Try a little more bakin powder, and a little less oil if they ain't tall enough for ya.

Shoot Dan, I'm using buttermilk and lard.  My cardiologist would have a heart attack his own self if he knew that!   :D

HEH. We went to the olive oil too. We did use lard for a couple batches and every time I'd take a bite I'd think about the open heart surgery I had 7 years ago, no thanks. I'd like to hear more about cooking biscuits in the dutch oven. POWDERMAN.  ;D ;D

Why do you guys wanna live till you are crapping your cloths and cant remember squat. obama's gonna cut off your medical insurance anyway. Live large and be happy eat what ya wanna and go when the time comes. Seems my Grandfather ate lard in his bisquits and eggs and red meat every day. He lived to be 84, my Dad ate healty watched his weight and died at 73. I dunno, I think i'll eat what the hell I want and deal with it.

I agree with you Oldshooter. I think you should keep eating what you want. At the very worst you will use less oxygen, that we will need after your gone, and with any luck I will still be walking rather than waddling. ;D

Well, I sat down and read this whole epistle. Looks like I ain't the only guy that likes a mean biscuit.
  Wife makes good ones; she just doesn't get the "why" part. So now I'll let her read it herself and explain it to her: The love for biscuits is like hair on the face. (Its a man thing.)
 
   But tell me one thing, do you use a pan in the DO to put the biscuits in, or bake 'em on the floor?

I don't put pans in Dutch Ovens. Sometimes tin foil for cobblers, but no pans.

Some things I have found for a more tender biscuit:

Use a mix of AP and cake/pastry flour.  Cake flour is made from a softer wheat so you get less gluten.

Most recipes call for cutting in the shortening until the mix is the consistency of cornmeal.  That is way to fine.  Like with pie crust, you get the flakyness from the layers of shortening and flour.  Cut it in to about the consistency of peas, or maybe even hominy.  Then the trick is to stir it together quickly, and fold it several times without handling it too much.  That is the tricky part, it doesn't take much to start that gluten going.

Hmm, never tried baking biscuits on the bottom. Always used a pan on a few rocks or nails.

Shoot Dee, you gonna think I'm stalking you also!   ;D  I use your bullet lube formula, your bisquit recipe and I know there's some more stuff of yours I've adopted!  And it all works!   :D

I made the best bisquits I have ever made last weekend!  Combined all the tips and other things I've learned since we started this discussion and voila!  Didn't do them in the DO though...  :-[  Wasn't quite set up for it.  But my Cabela's order should be here tomorrow and then I'll be ready for the weekend!   ;)

I told Kathie I was going to clean out the fireplace and use it to do my DO cooking in.  I kinda thought she'd think I was a little off in the head but she thought it was a good idea!   :o

Now, if I could just find a 31/2 inch biscuit cutter...  :-\  mines only 21/2 inches.

Cut both ends out of a tuna can or some other can when you cook next time. My grandmother made biscuits with a tuna can for a biscuit cutter for years. Washes just like any other utensil you use in the kitchen.
