Stopping a running deer, can be accomplished very effectively in my experience, by making a sudden, and unnatural noise. The guys in our camp, simply holler "woe" as loud as they can, and make the word short, and sharp. If you don't succeed, try it again. The deer, if running in dry leaves, or sticks is making so much noise, it may not be able to hear you. "Woe" works about 95%.
Of course, if you've been seen, all bets are off, "woe" may or may not work under those circumstances. If tail is up, I very much doubt that anything short of a bullet will stop the deer.
Many years ago, a lady we used to hunt with, (passed now GRHS) stopped a deer with "woe" with the hound dogs right behind it. She maintained that the deer stopped so fast that the dogs passed it.
