Smoked Carp?

I've heard that smoked carp tastes like smoked salmon, but has anyone actually tried this?  I would be very interested in hearing about it if you have.  Please no jokes.  I've already heard them.  ;D

You're right, Joe.  It sure seems to depend on who you listen to as to whether a carp can be eaten.  Guess I'll have to try it and see what happens, but I'll bet anyone who tries it will say it's lousy if they know it's carp.

I have a friend who is a long time butcher, 4th generation, for that matter. He smokes anything that can get ahold of. His thoughts on carp are that the dark meat needs to be removed. He had some, along with catfish, walleye, northern pike, as well as venison, beef, and sausage. ( I love fishing trips with these guys ) The main difference in the fish was texture to be honest, the flavor was dominated by the smoke and cure. All the fish was done together as it was freezer cleanout time.

If the fish comes out of foul water, stinky, rotten smelling, off flavor, the fish will taste pretty much like the water. Keep the fish in a fesh water live tank for three days and it will clean up to as good as it will probably get. Let the water have a slow exchange by adding fresh water and letting the excess overflow off. Fish camps on lakes slews and swamps in the south use this a lot for fish caught in the hot summer time. eddiegjr

I guess one thing the carp have going for it here is that this is a 150 acre, very clear & clean lake.  Since it is a private lake it is checked often for quality.

They sell smoked carp in the stores here in WI. Some times its awesome some times it sucks, it seems to vary by the way it is cured and smoked.

 I shot some carp with my bow earlier this year and smoked some for the first time and the flavor was good but it was greasy (yuck), I talked to the wifes cousin, who smokes his own fish as well, and he said the trick is to flip the carp from time to time as it smokes to allow the grease to cook out.

I have smoked salmon in the past (with great results) and had store bought smoked salmon and carp and pound for pound, price for price carp is just as good and cheaper as salmon if done right.

Its funny when I smoked my own carp, I just couldnt get past the thought of it being carp, were as the store bought I dont even think about it (stupid mind games).

Now that that you got me thinking about it I just took some carp out of the freezer I am going to give it another run probably tomorrow night. Ill let you know how it turns out.
