Eat to Live, not live to Eat.

An idea, that unfortunately departed when our population got refrigerators, fast foods, and prosperous.
In choosing vegetables and fruit that I could grow in my area, I researched the nutitional value of them, and found I had alot of nutritional food I could grow myself. The dark leafy greens, spinach, collards, swiss chard, and even beet greens, which have the added value of the beets, are all soooo healthy for us, with tons of Vit A, minerals and fiber. We all know the immune boosting qualities of onions, peppers and tomatoes, but tomatoes and peppers are also heart healthy and offer Vit C, and blood pressure lowering qualities. Cabbage and beets help to reduce free radicals, which cause cancer. Green beans and beets stabilize blood suger and add good fiber. Squash and pumpkins have good vit A and great fiber, and also a complex carbohydrate, stabilizing blood sugar. Apples repair the nervous system. Yellow fruits have massive Vit A and some vit C. All berries reduce free radicals and help the brain/memory. I could go on, but the point I'm making is that we can plant foods that give the maximum nutritional value for our efforts, and focus on eat to live, rather than live to eat.  ;D

Of course, a little homemade ice cream or home brewed ale/wine now and then wouldn't hurt..... :D

I am 55 and have not cared for beets my entire life . I had always had them pickled . Last weekend at my daughters wedding I had them raw in a salad and really enjoyed them . What you noted makes sense

The other day my family had dinner, Baked chicken & a big salad. I raised the chicken & picked the lettuce from the garden{ the first garden Ive ever done}. The only thing store bought was the tomato in the salad. My tomatoes are still green.

Congratulations on your first garden! Boy, I wish I could raise chickens, but not allowed to within the town limits. There's another thread about aquaculture. Raising crawfish would be really cool to me. Bet I could do that.

sorry guys but I still live to eat. Never was much on rabbit food. I like meat and potatoes!!! Wheres the beef!!!!

Yeah, those blond colored steers out there in the meadow are actually  GMO "soycows", from whence McDonalds gets their beef for their burgers. Soycows have a distinctively different sound when they call out. Its a G'MOOO, G'MOO....

Dang, If I gained the weight most people do from the amount I eat I would no doubt be the 900 lb man on the discovery channel :o  Thank God for metabolizim. Kinda a sore subject with my wife and daughter ;D

We used to have a physical trainer come to our annual cop refresher training and give us an hour on healthy living. One thing she said is that the most healthy way to eat would be to grow your own garden without any chemicals, and then go out to the garden and stick your nose down in there and just graze.

 Good advice. Unfortunately, I find that for me, eating right is kinda like losing weight; simple (eat less, move more) but not easy.

 It's getting easier as I get older though, as people around me disappear. "Hey, where's Bob been lately?" "Oh..... Didn't you hear? He's dead."

Go to the store and buy some raw.
Peel them.  cut them up into about 2" cubes.
Toss in a baking dish.
Add a little Kosher salt, black pepper, and some olive oil (teaspoons worth)
Roast at 350 for about 40 minutes.
Sprinkle wiht a little balslmic vinigar.
MMMMM
I always thought canned beets tasted like dirt.
Good black farm dirt but dirt non the less.
These are good
Will scare you the next time you go potty till you remember you had beets.  (turns your poop red)

Now that's news to me. Never had a fresh beet in my life. And the others did taste like dirt  -or gensing since it does too. I might just have to eat a raw one and see what it does for me.
 Meanwhile, we've been getting gallons of pickles. And them I don't like raw at all. Musta swiped too many too-small watermelons when I was a kid. Same taste.
