Jax,
There is a re-enactment every November at Plantation Liendo just outside Hempstead, Texas.  I participated in it for years before I sold my cannon.  It averages about 1000 re-enactors and around 20 cannons.  It is held on the 3rd weekend of every November.
Do a search on Plantation Liendo and you will find all the details.
There are also re-enactments every year in Granbury, Weatherford, and Livingston, Texas.
All the above are Civil War.
Gonzales is Texas Revolutionary.
