beets

Beets have sprouted. And, boy, do I have a mess of them. Used a hand planter, and some of the row has some pretty heavy concentrations. I know I'm suppose to thin them down, I was just wondering if anybody has had any luck transplanting them? Their about an inch tall, and had a thought, if I let them grow another couple inch's, maybe I could move some to area's in the row that are blank. Anybody ever try this? gypsyman

Haven't moved beets but other greens like turnips and mustard worked. I just reached over and poked a hole and poked them in. Did it as part of thinning. Didn't cost anything to try. eddiegjr

My mother used to cook the greens and they were better than spinach. FAR better!

I haven't had any luck transplanting them. So in heavy concentration, I let them grow a bit, then pull the small ones and pickle them. They are super good pickled. Then the rest get to grow bigger.

I have discovered over the years that you will get a pretty good yield of beets even though you don't thin them.I get pretty lazy when it comes to thinning, but we still can around forty quarts of pickled beets before the Wife rebells at doing more.We have also discovered that you can take those large beets and bake them and serve them like a potato with butter and seasoning.

I was experimenting with everything this year, so I blanched my beets and sliced and dried them. They are surprisingly good. Sweet enough to eat like candy. I especially liked the cylindra variety. I also froze some,  BLaH UGH.

Just pulled the beets yesterday. Got more than a banana box full. Planning on canning most of them tomorrow, really surprised at how many I got. Thinned some of the rows, and quite a few of them are baseball size. Don't think they got woody on me, as they all look really good. Will let ya'll know how the canning went. gypsyman
