Need a quick answer.
« on: August 31, 2010, 08:56:13 AM »
We were given some trout with the heads on, we've never eaten trout. Some say the head has to be left on when cooking or it will spoil the meat, my wife is REALLY against it. Me??? I don't care  but I can think of no valid reason for not removing the head before cooking. Ideas??? POWDERMAN.

Doesn't really matter, but if you take the head off you miss getting the cheeks and some of the meat off the head.  Good stuff there.

You could ask this in the Recipes forum here.

Nah... take the head off.  Half cook a couple strips of bacon, cut up some lemons.  Fire up the grill, let the coals burn about half down.  Pack the trout with a strip or two of bacon, lay a couple wedges of lemon on top.  Wrap in heavy foil.  Cook in the coals...  doesn't take long.  Don't let them burn...

whoever told you to leave the heads on is a moron.   lots of people do it that way, just as many if not more cut the heads off.   there is absolutely no difference in taste.

If the heads on will scare her away from the table. leave them on and it will be more for you.
Other than that. No difference.

i always cooked them with the heads on. actually i think the reason for it was it held some of the moisture in the meat instead of it escapeing where the head was cut off.i dont think it effects the taste in any way.the reason i always cooked trout whole instead of filleted was that when done correctly the meat would pull away from the backbone easily leaveing those fine hair bones still attached to the backbone.if you deep fried the fillets it may soften the fine bones enuf yu dont even notice them.baked or grilled whole with lemon and butter, mmmmmm mmmm good eatin!

This sounds like the best answer given. ::)

HEH. The heads went in the garbage and we simply rolled them in flour and fried them, delicious. It was very good but I still like bluegill and bass.  I will try some of these recipes on the next batch. Thanks guys. POWDERMAN.  ;D ;D

I always leave the heads on so I have a handle to get a hold on the fish. My favorite is pan size Brookies fried within an hour after catching them. When I lay them on the plate I can just grab em by the lip, pick them up a little and peel the filet right off. Turn over and repeat.

Doesn't matter if the heads are on or not. No difference in taste. Your choice. Some people don't like to have a staring contest with what they are eating though.   ;D
