This past weekend, fixed my all time favorite summer cookout meal. Hunky Turkey. About a 2# chunk of smoked jowl bacon, wood fire, veggies from the garden. OH yea, got to have cold beer. Let your fire burn down, put the bacon on a long fork, hold over the fire till it starts to drip. Fresh Jewish rye or French bread, sliced about 3/4'' thick. Let the bacon drip on the bread, and after it gets kinda soaked, put sliced tomatoes, green peppers, hot peppers on the bread. But, you keep dripping the fat on the bread, in between layers of veggies. The bacon will become cooked, and slow down the dripping, that's when you take a knife, and cut off the bottom layer, to expose new fat/meat, putting the cooked bacon on the bread. After about 3-4 slices, you can feel your heart rate slow down, but, if you've down it right, you've had a few beers in the mean time, you don't care. Fall asleep in the hammock. Now, if you ask me how it got named Hunky Turkey, don't have a clue. My dad, and all the hunky's in Birmingham,(that's East Toledo) called it since I was a kid. gypsyman
