Red Stag Flavor?

I am a big pig hunter, and the table fare is unsurpassed. One of the reasons pigs are the favorite around my house is the experiences my wife has had before we met, with poorly cared for venison. (whitetail) Now it's kind of a mental block with her.

I was looking at a high-fence with a nice population of red stag, and I wonder what the meat is like?  Or, are just back to venison?  I have had elk and I love it, I am just looking for something at least semi-great to put on the table.

Hey Jeff,

In my opinion....I'd say Red Stag is as good as Elk pretty much.  Fallow is better and axis still better.

a buddy worked on a game farm gave me sum red deer doe and it was excellent. seemed to have more fat in the meat than whitetail.the roasts were better than whitetail because of it.no gamy taste or nuttin. but then  properly handled whitetail never does either to me. cant speak for the stags tho.

When I ate my big one...it was kinda stringy ...  wasn't a the same as a small one....

A local place sells it from a domestic  private herd in New Zealand. very good. Especially the jerky.

I stalked this red stag in FEB 2010.   The rut was long past and the related hormones were not present in this animal. 

We've found this animal to be quite tasty, indeed.  Red stag is BETTER that a rut crazed elk herd bull by far!!
