This past summer, a friend and I spent Labor Day weekend at my cabin in northern MN. Looking through the cabinets, I found a bottle of mead I had made about 10 years before. I recall drinking some of the batch when it was about a year old, and not being real impressed with my work. We opened this bottle on a whim, and it was fantastic. Very dry, super smooth and with a deep, complex flavor. No matter what else you do, give it lots of time.
