I'm thinking someday I may get to go elk hunting. I like walnut, but stainless/synthetic is probably the smart thing. I'm pretty set on 30-06 since there is a lot of different ammo available.

It's been a while since you last posted here. If your still looking, here's my 2 cents:
1) A 30-06 is a GREAT choice!!!
2) But don't try to do all/everything with just one rifle. Plan this rifle to be one of 2 or 3 even if your budget says it may be awhile before you can add a second.
3) I don't own a stainlees steel rifle and probably never will - I just learned to take care of the finish on the ones I have.
4) Get the best value for your 30-06. A bolt action rifle probably offers the best/lowest cost out-of-the-box accuray.
5) Low end price - Look at Stevens, Savage and Rem ADL or a used rifle.
6) Mid-range price - Look at Rem M700 CDL
7) For a bit more - Look at the new Winchester Super Grade
