Bad Fallow Steaks

I just cooked up a couple Fallow steaks from my fallow doe and they tasted bad ???. I marinaded them for 5 days and i cooked them on indirect heat. and they just tasted bad. I about crted as I fed them to the dog :'(. I heard alot if people say fallow was awesome but I am dumbfouned why these steaks taste bad.

Ethan, I'm no chef, but how was the meat cared for after the shot?  Sometimes bad taste can be caused by what is done after the shot.  When you say marinated for 5 days, do you mean in the refrigerator?   Have you prepared wild game in the same manner as this fallow?   Trying to figure something out for you..

We marinaded it in our refridgeator and after the killed them we hung them in a big meat locker. This is how he takes care of all of his deer. I am not sure what made my meat taste bad.

Was it hit in the liver? If it still tastes bad put it in the crock pot. It will be great! I once hit a buck in the liver and had the same thing happen. Crock pot on high for 12 hrs then simmer to your needs...... good eating.

Nope first shot through the base of the neck and the second shot right through the heart and lungs. All the other meat was good the roast and loins were awesome.

No kidd'n....NEVER had a bad one.  They eat corn and silage so there's not alot of variation in the taste.  A big stag in rut maybe...  Wonder if it spoiled....

...didn't taste good...ok...that's different.  There are some game meats that folks don't like.  For instance...I find pronghorn to be like eating liver and I wasn't too crazy about bison...moose was ok, caribou (take or leave)...some of my boars, just aweful.  Never had a bad piece of fallow and I've shot 5...but...that doesn't mean that you will like the taste of the meat and now you know.

Fallow is the worst tasting meat I have ever tasted.
My family could not even eat the meat.

Ethan what did you marinade that meat in? Does a 5 day soak make it tender? some thing in the marinade or length of time may have given the meat an off taste.
I have never eaten fallow just wondering.

I woukd look at your marinade.

Also why so long a soak?  Long time is 24 hours!! Try different marinade and shorter times..

 :)  Howdy! The only time I use a long marinade (2 to 5 days) is when I am making Sauerbraten. Other marinades just 24 hours. I hate to throw away meat, but if it is not right, out it goes. People also have different tastes as well. I prefer black bear meat over many others.  Always, Gene

  Just my opinions and no offense intended.  Why did you hang the carcass in a meat locker?  It is a sure way to make game taste even gamier.  Yes, it will be somewhat more tender, but it tastes bad.
 
  Clean the carcass instantly, cool the carcass instantly, and butcher and quick freeze the meat absolutely as soon as possible.  The quick freeze tenderizes the meat.  You will be amazed at how much better the meat tastes.
 
   Also, in my 40 years of deer hunting, I have never heard of marinating meat for 5 days.  As another responder indicated, one day is more than enough.
 
   Very likely that the bad flavor was due to a combination of many factors.
