Whole Wheat Yeasted Corn Bread
INGREDIENTS
3 cups whole wheat flour
3/8 cup wheat gluten
1 cup cornmeal
1/8 cup buttermilk powder
3 tablespoons olive oil
1 warm cup water
2 eggs
1 tablespoon honey
3 teaspoons active dry yeast
1 teaspoon salt
Mix first group of ingredients in bowl of stand mixer. Mix honey in warm water then mix in yeast and let stand to activate.
When yeast is ready add the yeast mix to the mixer bowl and start needing with a bread hook. Add oil, eggs while mixing. Mix for a few minutes, stop mixing and cover for 10 to 15 minutes to let mix hydrate. Resume kneading and when it's about done, add the salt.
Adjust moisture content by adding more flour and corn meal or water as needed. The dough should be much stickier than usual bred dough at this point. Oil your hands and transfer dough to an oiled bowl and cover to let rises.
After the dough has doubled in size, knead in more four until it's less sticky and more like normal bread dough. Punch it down one more time then shape and bake at 350 degrees.
Options: 1/2 cup canned sweet corn or 1 cup frozen whole kernel corn (thawed.)
One or two finely chopped jalapeno peppers.
1/8 cup dried, chopped onion.
You can also substitute ½ cup grated Parisian cheese for the salt.
