Water Buffalo
« on: February 25, 2011, 08:05:54 AM »
I have been looking at  Dixie Hunting Preserve in Florida....water buffalo.  How do these things taste?  I am really NOT looking for a guess; I wanna hear from people who have stuck a fork in it.  Or is it going to be a "cape the trophy, and leave the carcass for the buzzards?" :o  Would an equal priced bison hunt be THAT much better value as table fare?

Thanks for the input! 8)

Hey Jeff...never ate WB...bison, different story.  Probably the best deal pound per pound.  Also, I think if you hunt with Danny Santangelo, you can get a letter for taxes and donate most of the meat to charity if you like.

Will plan to hunt with Danny in July 2012 for axis and WB.

A number of decades ago I walked into a Montagnard village.  They were butchering a WB.  I gave away all my cigarettes to the people working away and an elder cut a chunk of the buffalo, wrapped it in a palm frond and gave it to me.  I tried to refuse it, but he wouldn't hear of it.  I thanked him and left.  I really liked the 'yards, great fighters but uncontrollable in battle.  Even with SF training and leadership.

Anyway, I took the meat to the mess tent and had it fried up.  Unfortunately I can't remember what it tasted like but I do remember it was "chewy!"  Since it was a gift I ate it all so it couldn't have tasted that bad!   ;D

It beat the hell out of minnows and rice with nuc mam sauce.  :o

I think I hear chopper blades.... ;D

"I really liked the 'yards, great fighters but uncontrollable in battle.  Even with SF training and leadership".

Captain - Not so.  The Hmong I fought with and led, meaning under my SF Command and leadership, fought like seasoned Infantry (US Army Infantry that is) and followed orders like professional soldiers, not like a bunch of out of control trainees with attitude problems.  There were of course individuals who felt like they should always be in charge, sort of like Marines ya know, but when it came to major engagements they fought like professionals.  When they were on their own and out head hunting we really didn't care how they acted as long as they got results.

And I was told once, early on, that I should never (never, ever, never) refuse a gift offered by a Mountainyard Elder or Chieftan, especially if it was his teenage daughter (who was usually given over complete with battle gear and her own AK). if I/we wanted to leave that village alive.

And btw, Water Buffalo has to be tenderized, as in beaten with a stick or rock until it is soft enough to chew before cooking, then you can cook it.

And JeffG - do not ever eat those 'minnows'.  They ain't 'minnows', they are Cau Dai, which means 'crap fish' ()or rather, that's how it was interpreted to me...) - they are the ones inhabiting the village ponds the villagers 'poo' into.  Do you remember seeing those 'bridges' over the village ponds that had the 'chair' on them - yep, you got it..... even Nuc Mam can't make those fish taste any better.....

My last tour was in Phan Thiet, the Nuc Mam bottling capital of Vietnam!   :D  I never could develop a taste for that stuff...  :-\  It was really bad!   :P  But a good source of protein I guess.

Phan Thiet - lovely place, had a certain, umm, 'ambiance' to it.

You have to admit that the Mountainyard possessed a certain 'sense of humor'........

Doc, you and I were both too young to have served then.  I bet you have family that served though.  Guys I am enjoying reading your posts. Being a kid then I remember my grandmother reading my cousins letters that he sent from Nam. He usually included a few photos, and she always ended the letter in tears.  Fortunately he was able to come home safely. Did a lot of reading as an adult to try to understand it all. Reading your posts are both informative and interesting.  Thank you for your service!

I shot one in Florida in 2005. Brought the meat back and tried it.. Lets just say, my dogs had a lot of water buffalo to eat.. The meat was tough, and was not the best tasting.. I would rather spend my money on a Bison hunt, as I have eaten a lot of Bison meat,  and love it. The WB made a great mount though!
