Summer killed hogs
« on: June 13, 2011, 08:34:23 AM »
Can you eat them? :-\

When I was growin up you never killed hogs until cold weather set in.  Same as you never kill squirrels 'till after the first frost.  I imagine the former was because coolers/freezers hadn't been invented when this practice started, and I know the latter is because of wolves, but neither cause effects the "eatability" of the meat.

Do you hog hunters eat the meat of hogs you kill in (real) warm weather?   ???

:) Howdy! As far as I know it is ok to kill hogs any time of the year. In the Summer or warm weather you have a narrow window of opportunity to get them dressed out and on ice. This window becomes narrower as the temp goes up. In Winter, the window opens up as the temp goes down.  Years ago, a hog killing took most of a day to butcher and get ready for the smokehouse, etc. This was usually done on a cool or cold day. Hope this helps!  Always, Gene

Happy Trails!

it always seemed to me that a squirrel was more firm when cooked if it was cold wx.
your right about the squirrel being edible. the wolves are in the skin only. never touch the meat.

When they were prevalent in this area (not for a year or better now), we shot them every chance we got.  Dead of the Florida Summer...no problem.  They had been eating a smattering of my supplementary corn though and it helps to clean the dirt out of their system, yellow up their fatty tissue (just-off-the-flood-plain pigs exhibit grey mesentery and practically zero fat), and keeps them in the vicinity for more fun.

It is only a 30-minute ride back to the house, five minutes to string them up and wash them down, a 1/2 hour to render them into the freezer, and 15 minutes to clean up and go inside for some supper.  Sausage grinding is left for the Processor and he is open only in Deer Season.  So, winter hogs are ground up for sausage and summer hogs quartered and spitted to BBQ.

Fall hogs are some of the best though, particularly after they have filled their bellies with early season wild grapes that have been fermenting in the late August sun.  Punch drunk, marinated inside and throughout every pore, they are best about 100-pounds or less, slow roasted on the grill or in the oven, and eaten with mashed potatoes, apple sauce, and peas.

My experience has been just what Landowner says above.  I have hunted piggies in Flawda and Jawja fer pert near 30 years now and the only thing 'bout summer piggies is you has to git em on ice a lot faster.   Tastes great!

I believe it Gregg!  ;D

I was talking to Kathie about heading down there and she said she'd like to go and look around!  :o  When she feels better of course... and if there's a 5 star hotel in the area... and good restaurants, can't forget the restaurants... theaters!  almost forgot the theaters...  she prefers the little dinner theater type.

But we are talking Waycross here... :-\  I dunno, that theater thing may be a deal breaker right there.  I'll probably just go alone...

But if I do then I'll bet she will go to the antique auctions with her BFF...   ???  And that just costs me money...  :(  I went off this weekend and she bought 3 tables!  One Saturday and two Sunday!   ::)  Now, what the heck we gonna do with 3 more tables?   :-\

Wimmins!   ::)  I tell ya there just ain't no figuring them!   :(  If I go off for a weekend and as long as I got at least a 12 pack (a night) I can sleep in the back of my truck and I'm okay... If I get hungry I can drive to the nearest Bar-B-Que joint and get me a pork sandmitch or some pork ribs!   ;D

???  wait,  pork...  :-\  that sure seems like it should remind me a sumpin...  :-\

Now, what the heck we gonna do with 3 more tables?

1.  Stack 'em up and put your reloading and casting supplies on 'em.
2.  Stack 'em up in the dog kennel for that "Condo" look.
3.  Stack 'em in the living room so everyone has their "own space" for stretching out to watch TV.

I am sure there are other SA answers to this "dilemma".

And don't forget, them < 100-pound little-uns are good with apple sauce and peas.

Ya know, since you can eat everything on a hog but the squeel, where do ya shoot them!?  Ribs are to good, head meat's to good to waste (not to mention pig ear sandmitches and brains and eggs!   :P )

Only thing I can think of it to hunt 'em with a spear!

Do ya skin 'em or boil/scrape the hair off?  If ya skin 'em, what do ya do for cracklins and pork rinds?   :-\

I dunno - these piggies down here are very lean in the ribs - I have tried cooking them before but don't get too much meat and what is there tends to be on the chewy side. My target of choice is just under the ear  =  BangFlop

Only thing I can think of it to hunt 'em with a spear!
Now that we can accomodate - I keep a Zulu Assegai,  and a Samburu spear at the camp for just such forays into the wild  ;)

Do ya skin 'em or boil/scrape the hair off? don't take the time to boil em.... jes skinnem and debone the meat.    If ya skin 'em, what do ya do for cracklins and pork rinds?  corner Jiffy store gots dem Pork Rinds/ Chicharones for $1.29 bag   ;D :-\

THAT IS SO COOL!!!  :o  Those two are my favorites although I prefer the Assegai.

When I went through knife fighting training the first thing the instructor told us was you never throw your knife!  If you do you have just thrown away your weapon of last resort!  That attitude kinda bled over to my feelings about spears.  So naturally, up close and personal the assegai is more maneuverable.

'course I don't carry a spear much nowadays...  :-\  But I remember back in Africa.  I was introduced to this fella names Shaka something or other and ... well, that's another story!   ;)

Okay, so I gather a head shot is best for max meat use.  Although a rib shot, avoiding shoulders and tenderloin/backstrap area is also acceptable.   :-\

Field dress the same as deer, ice down quickly and, I assume, cook thoroughly!

I can do that!   ;D  Okay Gregg, when we goin?   :P  But I don't want that big ugly mutha in your trail cam pic!  I like my hogs like I likes my wimmins!  Young and Tender!   ;)

Howebber ( I like to borrow this vernacular from someone you know well) - ifn you do happen to run across one of those two large boars that go by the name of "Tank" or "Patch"   please place a pill in their noggins.....   I have camera time of either of those two bruisers destroying a food plot over a 3 hour period of time.

Well, the rest of ol' Painless's hunting club members might not take kindly to the hog hunting hoards descending upon their lease!   ;D

But anyway, Gregg's off on a vacation with his family so I wouldn't look for a reply any time soon!   ;)

I drove through Waycross, GA and took that left yesterday (on my leisurely way to Murphy, NC up US1).  Maybe I did and maybe I didn't see gstewart44 during my brief sojourn through there.  How would I know?  45-70.gov was prowling not too far SE from there too as I called him while passing through J'ville at I-295 and I-95 and he was passing through right through that intersection at the same time too!  Must be a black hole near there.  Deja Vu or something.  It was really unplanned and a pleasant surprise.

Just to give another answer to your initial question.  We are snaring some, bringing them back alive, and butchering them where it's cool and clean.

Or, we shoot them in the neck, we lay the hog on the ground and start the skinning process by making a blanket, if you will, out of his own skin.  We are very careful to keep the meat-side of the hide touching the meat.  At no time do we ever allow the hair to come in contact with the meat.

We carry large ice chests filled with good hard ice and, as we remove shoulders, ribs, hams and loins, we cover it all in ice right there where we dragged the hog into an opening.  It's done quickly.  This bigolebelly maks it rough to butcher a hog on the ground though!

Our hogs eat well.  Most of them have a 3/4inch to 1 inch layer of the whitest perfect fat you ever saw.  I truly believe our hogs could be scraped, skinned and make fine cracklins with.  They have no off odor and like I said, the fat is snow-white.  Would render down to high quality lard.

Hey B'O'Dude!  Now that's the type of care any meat should get!

So I have learned that shooting hogs in warm (hot) wx is okay, but you need to take some special care to get the meat cooled down quickly.

That makes me feel better as hog hunting is a year around proposition here in Jawja!   ;D
