apples, peaches etc. will need bug spray so I would go with nut trees and fruit that grows wild such as persimmon, plums and muscadines.  don't know about fiber.

Is there specific info you are looking for or some practical examples ? This type of info is really climate zone specific when it comes down to choosing  plants for a particular end use.    You could try to contact any "Permaculture" groups in your local area. Google '' Permaculture" for an explanation of what it is .It would take too long to explain here , but simply put it is a sustainable Farm/ Gardening / Community design principle which can be applied in a range of environments , to select suitable combinations of plants , animals etc. that interact positively to produce food , fibre and shelter.       It IS NOT a subversive , terrorist  organisation .but ''Permaculture" organisations world wide are working to preserve "Heritage" seed variteys & oppose the Patenting of plants by multinational seed companies .
Hope this may provide a usefull lead to you.

Whoever said that this is temperature-zone dependent:  +1.

Don't overlook Jerusalem Artichoke, more a tuberous plant than a shrub, but once established they are self-renewing and the tubers pretty much substitute for white potatoes.

A wild cherry tree is a source of fruit in some ares and parts of the tree, such as the bark, are medicinal.  The slick-barked part of a willow is basically natural aspirin.  A poke root poultice, according to Mom, would cure anything but a broken heart. Ginseng has many uses if it will grow in your area.

Wild persimmon trees have goodly amounts of fruit and are a source of raccoons and possums for meat.  Any nut tree that grow and produce in your area.  Pecans are especially prolific in my area but take a long time to mature.

Anyone ever heard of Magnolia Grandiflora blossoms being a potent pain killer? I had one in the freezer, but didn't get in enough pain to try it and had no instructions anyhow. If it works, one flower would go a long way since they're about a foot wide.

There's a book called Back to Eden, by Jethro Kloss which I have in my Doomsday collection.  It says that magnolia BARK can be used as: quote...astringent, stimulant, febrifuge, tonic, aromatic, anti-periodic".

Nothing about pain relief or the flower.

I don't see anything about it in the Foxfire set I have.
