half and half red beans and pinto beans, soaked overnight
in the pot early in the morning
cover in water
salted ham chunks or ham-hock or preferably a BIG ham bone with a bunch of pieces still on it
one cut up onion
lawry's seasoning salt
maybe a bit of brown sugar
cook all day on low
make corn bread... I still prefer jiffy mix but cut up a bunch of jalepeno and put the chunks in the mix, maybe a handfull or two of grated sharp cheddar too.
Two pieces of corn bread in the bowl, a big spoonfull of real butter, cover with beans and ham.
Be sick all night from eating too dang much...
Do it again the next night with the leftovers...
