My 49th Lyman shows a 158 grain Hornady JHP with a start load of 11.3 and a max load of 14.9 using 2400 and a magnum primer. Max velocity is 1279 from the 4" test barrel so you'll do much better than that from a rifle barrel.

Just a word of caution, please be careful with any hollow point bullet for use on game form a rifle/carbine barrel.
The vel increase is upwards of 500 fps with some caliber and loadings. These bullets are designed to expand to limit penetration. While bullet expansion is a good thing, limiting penetration is NOT a desirable trait with a hunting bullet. Look to the Soft Point bullets. They will expand reliably and yet provide performance more inline with a regular "hunting bullet". The lone exception to this is the excellent XTP bullet from Hornady. But even then, choose the heaviest bullets as long as powder cap is enough to reach satisfactory velocities for bullet performance.

My favorite bullet for the 357Mag in a carbine is Hornadys 158 XTP FP. But Speer and Sierra both make a good bullet as well.

2400 will do you well, I find it dirtier and prefer the H110/WW296 powders. But there are a number of powders available to you that will get that bullet moving up around 1800+ fps.

My particular load is 13.6gr of 2400 and the XTP 158 gr HP.My grandson has killed 3 deer to date with it, and at 60-75 yards had clean pass throughs on all 3 deer, all medium sized does. If shots are chosen judiciously there will be no problem. I would say that broadside shots on typical deer at under 100 yards should work just fine. Quartering shots, longer range, or an exceptional animal, could make it dicey. That is a moderate load, it just happens to be the most accurate in my barrel, and I was more concerned with that than power, and the results proved it to be quite adequate.

50 yards groups with the 13.8 (dipped with a Lee Dipper) are right at an 1" with a little 4x scope.
