One pot meals for camping

I am looking for some recipes for 1 pot meals to take camping.  I will freeze them and just heat them up.  We will have dry ICE.

   come on all you Boy Scouts,  help me out here.

 My favorite is one or another beef stew concoction. Can't say as I've ever used a recipe; I just toss in whatever sounds good. More often than not I seal up individual portions in several layers of foil and heat them right on the coals.
 
 Another easy one is some kind of stir-fry. Shishkabobs are pan-free though, so I prefer them.
 
 Stuffed baked potatos. Pre-cook, load 'em up with goodies and wrap in foil.
 
 Since you have dry ice, you can bring ice cream for desert.  ;D  My Wife mixes up sliced apples, rasins, cinnamon, sugar and butter. She wraps it in a foil pouch, cooks on the fire 'till the apples are soft and we dump it on the ice cream.
 
 As you can see (if an open fire is available), I don't like to do dishes on a camping trip. All of the above can be heated in a pot if you must though.  ;)

When ever we have left over caserol type meals, I put them in vacuum bags and freeze them. When I go to the country I have to keep them frozen until a few hours before I use them. I have been just heating them in the bag in boiling water, but several times now the seal has split as I lifted them out. I have decided that the hot water is weakening the seal, so I guess I will have to open the bag and put the contents in a pot.

I used a small non-stick skillet and store-bought stews.  plus with a little oil and flour, you can par-boil a squirrel then fry him up and pour in a jar of gravy.  you'll wish you had 2 squirrels and a bigger skillet.

I would think that if you ate two squirrels a day it wouldn't be long before you had no squirrels.

I'll make a Chicken Gumbo at home, freeze it and it'll stay keep about 5 days at least if you want it to. Boil up some minute rice and you are eating pretty good in 15 minutes. I do the chicken primarily because of shellfish allergy concerns.


Wild Rice and Chicken gets high marks at camp too. Stew a chicken till its falling off the bone, I try to end up with about as much broth as needed to cook the rice. Cook the rice as stated on pkg. you'll want at least 2 cups I suppose. I generally make 3 and if any is left over I'll eat it at home. Mix the rice, chicken two cans of cream of chicken soup together and freeze. I like to add plenty of sliced mushrooms as well. I simply mix it and adjust liquids and rice till it is looking right. Now this will keep absorbing liquid so don't be afraid to leave it a bit dry and add water at camp to save weight in the cooler and it'll thaw faster if dryer. I sorta like it dry, some will get it about to the stew point.


Goulash, we'll let the ingredients list go, I don't want to start any shooting wars here. Just remember to under cook the pasta before freezing it (we can agree on pasta can't we).


Finally I would consider taking pulled pork bbq for good hot sandwiches. I cook a picnic roast in the Weber for a couple hours with some hickory on the coals. when the fire dies down I'll finish it off in the crock pot. Cheating, I know, but I usually have too many irons in the fire before a hunt to be babysitting a Weber. The real fire does make a big difference on the end product from the crock pot. Now I like to pour about 1 cup of Franks Red Hot and a 1/2 cup of cider vinegar and 1 cup of Famous Daves BBQ sauce in the meat and bring xtra sauce separately. I want it to be relatively dry when finished so usually end up cooking it with the lid off for a while.


We have come to the conclusion that three qts of finished product will feed 6 guys and rarely is that short. Usually enough left for a couple hot lunches the next day as well.

CAMP CHILI
2 lbs ground chuck
6 jalapeno peppers, seeded and chopped
20 oz can chopped tomatoes
6 cloves garlic, minced
4 tbs chili powder
dab (?) of bacon grease
1 tbs cumin
1 large onion, chopped
2 tsp salt
1 tbs oregano
 
Brown meat, garlic and onions in bacon grease
Add jalapeno peppers and mix well
Add remaining ingredients, cover and cook for about an hour.

I usually buy the Mountain House meals from Walmart and the in-expensive spicy dry soups. The Mountain House retails for around $5.00 and feeds two folks. Ones I've tried are pretty good and I don't have to keep ice. Just add boiling water to either of the above. When it's a fishing/camping trip, there will also be some fish shake and cooking oil in the boat. Some of the coffee singles and some granola bars added to the mix and I'm good to go. If it's a big camping trip and a cooler with ice is coming, I agree with the other members about bringing left overs.

Boil in a bag rice and whatever you got to go over it. I carry dried carrots, onion and celery for when the fresh runs out (+jalapanos);  S&P and Curry Powder for seasoning.
Fresh fruit until gone, too, then fruit cups. An applesauce cup stirred into instant oatmeal makes it way better. 'Cocktail' breads hold up better than most, then go to heavy duty crackers.
I also like to start out with a hard salami and extra sharp cheddar cheese. Walnuts go great with it, too.

Not a have to cook something but still pretty good. Measure enough, into a ziplock bag, of the instant dry milk to where all you need to add is a cup of cold water. Add water, zip the bag and then knead it until all looks right then add some of your favorite cereal and it makes a nice cold snack on these warm days. My wife and I did it on a camping trip last weekend and enjoyed some frosted shredded wheat for lunch.
