supper tonight

chicken fried vension cube steaks and fried taters and onions with homemade venison sausage gravy poured over the whole thing. Dont get much better!

no it does not get much better than that for sure! if i was going to be hung that would be my last meal! only to be rivaled by young doe bakstrap, lightly broiled whole over hickory coals, till pink in the middle with mashed homegrown taters with sour cream in them and lots of home made butter.

sorry charles but im not a fan of cornbread. Now real southern hushpuppies i love but ive tried to make them using a few differnt recipes and they just dont taste like my old service buddys ma in NC used to make.

dang! now yu had to go and talk bout hush puppies. rite now im digging some spring ketched crappie out of the freezer to thaw and lookin for sum zaterins hushpuppy mix in the cupboard.

morning cup of Joe , Pan fried perch and eggs with quarter cut fried taters and corn beef hash
in deep pan over open campfire.  (grits optional) . I love grits.

Ok now I'm hungry again.

Best campin Gravy I ever had is sent to me from my in-laws in East Texas.
Pioneer Brand country sausage gravy over Biscuits . They send me Packets for campin every year.
If you never tried it I highly recommend.

They also send me Wolf brand Chili . Best store bought Chili for campin I ever came across.

my wife can do amazing things with deer meat. we generally only eat venison when it comes to red meat, but only got 3 deer this year. last year got 6 and it barely lasted til this season. she'll take some ground pork and mix it with ground deer to make burger patties and she adds ranch dressing to the mashed taters with some spinach fritters..WOW. She was not raised around guns or hunting but has transitioned well. Father-in-law would not deer until he was hrassed enuf to try a piece, he ended up eating 3 plates that night. no complaints since. they actually request a deer for themselves if i shoot an extra.

Had some 'wild game stew', a mixture of all the wild meats on hand plus some veggies and whatever else is laying aroung  thats edible.  Big old skillet of cornbread.  Neighbors ate and ate...then asked what meat it was.....(why all of them) says I.

Glory canned mixed greens with oven roasted deer meat and some big butter beans added, made a soup.  Seasoned with just a taste of vinegar, a few red pepper flakes and a litle garlic. Flavors paired real well. Corn bread to go with it. ear

Last night, sliced a venison roast in half to make two big steaks. Marinated in Montreal Steak Seasoning and grilled it.
Thought it might be tough, but it wasn't.

Sides were sauteed vegatables & blue cheese cole slaw.

No leftovers to put away.

So I went to the grocery store tonight and grabbed a hunk of Slamon for dinner
I pan seared it and stuck it in the over to finish it.
At the same time I made some plain white rice and then thought I needed a sauce.
SO I grabbed an Orange, and juiced it into a small pot, added a table spoon of white sugar, a tea spoon of powdered ginger, half a teaspoon of wasabi powder, some low salt soy sauce and a dash of toasted sesame oil.  Put it over some heat to ticken it up while the fish finished in the oven.
Scooped some rice onto the plate, added some heated frozen peas and put the fish on top of the rice and poured the sauce on top, nice sweet heat of the ginger radish and soy. 
MMM I'm doing this one again.

Tomorrow night I am going to my brother's hunting club for a rabbit cooking. They have around 75 bunnies to bar-b-que. Them boys know how to cook and party, low key. Gonna be good! ear

OK that was a fantasy! since posting that The cook has explained to me that it aint gonna happen tonight! maybe this weekend though. Tonight may just be a ham sammich and fries.  ::)

Got a good sausage recipe and a red beans and rice recipe too but I could use a red beans and rice slow cooker recipe.  That's a hint Swamp!   ;D

A grilled Tbone steak with grilled zukini, Roma tomatoes, tender white wild garlic bottoms grilled till sweet and garlic pepper french bread accompanied by a longneck. My breath can kill small to medium size critters but it sure was good. A woman with garlic breath sure is sexey!  Good good night all. ear

Roast duck breast with orange wine sauce and wild rice and spinich.  Made many notes on the recipe.  Use Sherry rather then Merlot, reduce cooking time or temperature...  :-\   Next time will be better.   ;D
