Mine shoots about like Tim's. I didn't like the the thumb hole stock for still hunting,I put a lam MC stock on.

Mine loves Speer 350gr FN.  Like Tim said, she's a little heavy, but packs a big punch ;)

Don't really think so, as far as taper goes.  It's 2" longer.

 Two inches shouldn't make a lot of weight difference. I presume it does change the balance of the rifle.
 
Since I don't hump my 45-70 through the bush, heavy isn't a problem. Both have  bagged sand in the stock to add weight to tame the recoil with stout loads.

Here are some comparison weights:

24" 45-70 Ultra Hunter w/Nikon Omega in Leupold PRWs on H&R base 8lbs-6oz

22" 45-70 Handi in cinn lams w/same scope and mounting 8lbs-4oz

And my kinda carry big game rifle:

20" 7mm-08 Lite camo syn stock with Leupold VXII 2-7x32 in Burris Zee rings 6lbs-5oz!  ;D

I don't have the Ultra 45-70 but I have a Handi with the TH stock and it is right hand use only and too me isn't very useful as a carry gun for offhand shoots.  Shot from a bind or stand with a bipod or good rest it would be fine.   You should be able to trade a new set of TH Lams for about any current production factory stock set you want.   Stainless steel sounds like the ticket for folks who hunt in places with high humidity. ;)

The t-hole lam isn't as heavy as the monte carlo lam, it's 8oz lighter,  from the FAQs:
