Turkey sausage

Anybody have a good turkey sausage recipe? Wild or store bought turkey, I have bought and would like to grind some up and stuff and smoke.

about any recipe that works for venison will work for turkey. Keep in mind that its lean like venison and will need pork or at least pork fat added. I make summer sausage and breakfast sausage out of deer bear and even have out  of wild turkey and you cant tell a bit of differnce in taste. I allways tell people you could probably grind up road killed dog and use it in sausage and nobody but you would know the differnce.

I went ahead and did it, I used 5 lb. of wild turkey (light and dark meat), with 5 lb. of pork. Ground and mixed with a Kielbasa mix, stuffed in hog casing and smoked. Taste great, casing is a little though but peals off easy.

I usually shoot a couple wild turkey at camp every year and never really got excited about the taste of them. I think the next couple i get will go toward a batch of summer sausage
