Jeff, Does your gun have the 2 5/8" stamped on the barrels or did you measure it yourself ? The reason I ask is I owned a early Ithica 20 ga. double and it was not marked as to chamber length and I shot thousands of 2 3/4" skeet loads thru it without issue.
I just measured some fired 20 ga. cases and they average 2.675 " so only about 50 thousands over. Shotgun chambers have a slight taper from the breech end forward, I would try to get a accurate measurement of your chambers and if there isnt a defined ridge or abrupt sholder short of 2 3/4" I would go ahead and shoot it with 2 3/4" shells.
Different gun makers use different chamber dimensions and yours may be OK, my Ithica was the early Fleus style, not a NID ( new improved double ) and I beleive was earlier built than yours.
