VINEGAR

Any of you guys make your own vinegar ? I got to thinking about how many uses it has and the ability to make it outside of a factory setting.

I too have been wondering about this.  Oleic (sp) acid is diluted to make white vinegar, but there is something called cider vinegar that might be made at home.  Also improperly fermented and or handled wines are said to turn to vinegar so that is another area to research.

*********EDITED**************

one source says acetic acid, one says oleic, another claims a blend of acids

All I have ever heard is that it is winemakeing gone wrong or planned. Sounds doable at home. ear

:)  Howdy! What I have heard is that you can make wine, then let it set longer fermenting until the alcohol is coverted to acetic acid. Apple cider vinegar was apple cider wine previously. Always, Gene

never done it myself.
from what i've read, it is very much
home do-able.
i've always been too stingy with my
time to try it, and it's still too easy
to get in the store at a good price.

well. . . . .
it probably won't be now 'cause i would
imagine the gummint is monitoring this
post and is formulating a plan to restrict
civilian access to vinegar in the interest
of national security. probably be 29.95
a gallon by monday. . . .

Cider vinegar is made from apple cider.  White vinegar is made from corn.

"Bragg" brand vinegar is all natural, unfiltered and organic. It has the vinegar mother ghosting around in the bottle. The mother is all you need to turn cider into vinegar, but it will turn into vinegar mother by itself. Wild vinegar may be like wild yeast; some good and some not so good.
 (Watermelon vinegar is awful.)

I hate the smell and taste of vinegar.   I have probably not bought any in the last 30 years.  So, it is kinda fascinating to me that you guys consider it to be a staple, something worth making.

Too many fine dishes to give a complete list, but a few drops over turnip greens, cucumber and onions need a vinegar bath, and if you eat at one of the fast food fish places, a few drops of malt vinegar helps cut the grease, and adds depth to the flavor.

White vinegar makes a nice marinade for venison.  I recently put some pieces from a lower hind quarter in white viengar to marinate and was pleasantly surprised at how tender and tasty it was.  The vinegar gave it a little tang, almost like a German dish that I vaguely remember from years ago.  Don't remember what it was called but I will do it again.

Vinegar is good for cutting the dog slobbers off a dish. Dog drool is alkaline so soap doesn't work so good.

Oh I do consider it to be quiet the commodity in tough times.  There is a Filipino dish called Adobo made using chicken or pork that is most dilectable as far as table fare.  This dish is commonly taken as a lunch for many Filipino workers as you can have it out in the jungle heat for extended periods without refrigeration and it doesnt spoil due to the amounts of vineger in the dish prevents bacteria growth.  I have served this dish to my house guest as well as took it to Pot Lucks and I have yet to have some one not rave about how great it was and want the recipe!

Manny, my son almost gets sick when he smells vinegar.. Could not be in the same room when a bottle was opened, we thought he was just being difficult until we found out there are some people that can not tolerate it. It's thought to be a genetic thing.

I take medications that make me easily dehydrated.

Adding vinegar to my daily diet has dissolved my kidney stones which are a by-product of dehydration..

My Doctor and multiple MRIs have confirmed this naturopathic solution worked for me, since my stones
were formed by eating too much meat and/or dairy.

Now if the SHTF, you can cleanse kidneys and avoid some very painful and life-threatening health problems
by adding a little vinegar to your diet. As we age, our stomach acid becomes less potent, so some people
sip vinegar before meals to increase the acid content of the stomach.

It is hard to choke down, but a little lime and tonic water make Cider Vinegar bearable if diluted.

Another alternative is to take one day and eat an entire watermelon and nothing else.

Keep in mind that home made vinegar is going to be much stronger in acid content than the 5% store bought stuff!  We try to keep a case of gallons of cider vinegar on hand at all times for canning projects.

I've had red wine that was open so long that it began to turn to vinegar.  Used to save it for salad dressings.
Now I drink better wine and empty the bottle.

Just for those that suffer the problem. If you like vinegar'ed foods and have hemorrhoid problems, cut down on the vinegar and take B complex.  ear
