EASY STUFFED PORTABELLA MUSHROOMS

If you like mushrooms you'll love this recipe:

2 packs of parabella mushrooms
1 roll of mild sausage (hot if you want to spice it up)
4 celerary stocks diced up finely
1/4 cup melted butter
2 tablespoons soy sauce
Salt & pepper to taste

Take two packages of parabella mushrooms. Usally about 20 mushrooms per pack. Clean and drain mushrooms and then blot with handtowel. Cut stems of mushrooms and save. Take small knife and scrape out mushrooms carefull not to break or go thru the top. Discard scrappings. Mix sausage and finely diced celerary together. Stuff mushrooms with the stuffing put aside. In a 12x8 glass baking dish add 1/4 cup melted butter and 2 table spoons soy sauce and then add mushrooms and the stems. Salt & pepper to taste. Bake at 350 degrees for about 45 minutes. Serve with a nice steak of your choice, home made rolls, and a tossed salad.

Mmmm! :grin:  My mouth is watering just thinking about your mushroom recipe. I'm gonna have to try this one soon.

I read your post and just about fell off the stool. I figured out what you were talking about. It should have been portabella. Must of had my mind on a gun when I typed it down. Good thing my reloading equipment will not be in the kitchen you might catch me adding smokeless powder to meatloaf. :) Can't believe I did that. Portabella/Parabella Easy mistake I guess. :-)

BIGBOREFAN   I must admit to getting a chuckle from your clever play on words, but we are always laughing with you.  Your recipe sounds great.
I  can't wait the 12 weeks til the morels are out again.  I saute them in butter then drizzle a raspberry/honey/soy concoction over them.

Have you ever fine diced the stems and added to the stuffing?
