Pickled Deer Sausage
« on: December 02, 2012, 12:36:04 PM »
Anybody know any good pickling recipes for summer sausage. I have been making it for the past couple years but lost my recipe I was thinking it was 2 cups of water 2 cups of vinegar and 1 or 2 tablespoons or pickling salt all the ones on the internet say 4 cups of water and vinegar and 2 tablespoons or of pickling salt. A buddy of mine made some one time that tasted sweet and they were delicious but we dont speck anymore so I dont know what his recipes were either. hoping some of you guys might have something

My gut reaction was to suggest about 1 TBS of brown sugar to your brine.  And maybe throw in a few extra juniper berries and whole allspice.  Then I went looking and found this site:  http://www.wedlinydomowe.com/sausage-making/curing/making-brine

I used two cups of water and two cups of vinegar and one tablespoon of pickling salt
You boild the water and vinegar stir on the salt and pour into a mason jar and seal it then let it set for abot three days then enjoy
