Southern Food Quiz

We just finished up a traditional southern new years meal of hoppin' john, cabbage and rice.  Some nice smoked ham and sweet tea.  Ya'll yankified people eat that?

Sauerkraut with sausage, tater fried with onion, black-eyed peas with a little jalapeno pepper diced in, and homemade scratch yellow cornbread with a couple tablespoons of raw honey in the batter, washed away with sweet tea.

Black-eyed peas with bacon, stewed tomatoes and spinach served with corn bread and diced union.
My beverage of choice is a dark brew (and I ain't talkin' bout tea).   ;)

Just had hog jowl, black-eyed-peas, collards and corn bread.

I GREW UP EATING THAT IN SOUTHERN ILLINOIS.  SOUTHERNERS DO NOT HAVE A LOCK ON SOUL FOOD. ;D

Good ham has entered a golden age here up north. Used to be unobtainable, but now we can get spiral cut honey glazed ham that is really good. As for a smithfield type ham, those are unobtainable locally. When we go south, we always stop for breakfast and have southern style ham. Yum.


As for hoppin john, we are more cajun oriented, making red beans and rice as a favorite.

food depot has huge bunches of collards.  I wash each stalk then strip the leaves off into the pot.
throw in a couple of smoked hocks and YUUUUUUUUUUUUUUUM!!!

Black eye peas, smothered cabbage with venison sausage. Corn bread and deer back strap stuffed with boudin. What ever you want to drink. Home made carrot or sweet potato cake with cold milk for desert.

Get ya' some blackeye peas.....dried are best.  Soak them as prescribed on the bag, dump them in a pot.  Add some stewed tomatoes.  Add some hot pepper.  Add in a big old hunk of ham hock.  Cook it to a mush.  You will need some good corn bread to go with this, and a big glass of butter milk or sweet tea to wash it down.

We always had cabbage, blackeyed peas and crrned beef, can no longer afford the corned beef, since obummer,  so it was smoked sausage. Still mighty good. POWDERMAN.  ;D ;D

What Dee said, except leave the shrimp out and no cornbread or rice. Instead, make yellow grits flavored with chopped up fried bacon and scallions, then a few minutes before serving, add a generous number of shrimp to the grits and mix them in. When the shrimp are pink, it's ready to eat.  Serve up some beans, and some shrimpngrits.


Last, but not least, leave,room for dessert. Pecan pie with a side of peach pie and butterscotch ice cream. Or maybe orange pie instead of peach (like lemon meringue, but made with orange and lime juice instead)


Black coffee. Old stories. Maybe a shot of sippin whiskey later on, just before bed.

The problem with fish around here is much to the shame of Retailers and I live in a Maritime Province, just about all of the fish comes from China. I'M NOT GOING TO EAT THAT STUFF. >:(

HEH. Bugeye just HAD to mention grits. Growing up in ILL I listened to the Grand Ol Opry most Sat nights on WSM in Nashville. For YEARS I heard about those delicious GRITS and luzianne coffee with chickory.
Finally I got to go to the opry when I was in hi school. We stopped to get a bite of breakfast. There it was on the MENU, GRITS, I had to have some of that wonderfully delicios food so I ordered a bowl. Boy was I disappointed, WHITE corn meal mush. I was raised on mush, and they called it grits.
 Before coming home I also bought a can of LUZIANNE coffee with chickory. My parents wouldn't drink it, they said chickory  was added to coffee to make it last longer in WW11 and they had enough of it then. POWDERMAN.  ;D ;D

PM, I was listening at the same time to WSM. little wood radio with a wire under the window and out to a tree for an antenna.  remember the great gildersleeve, and inner sanctum?
on topic, my momma would cook grits with a little lard and pour'em in a loaf pan and put'em in the icebox overnight, then slice it and fry it. good with butter and sorghum.

For real poor southerners, grits were "egg extenders." Mix with scrambled eggs and add a bit o' guv'ment cheese. Add some biscuits and sausage, and you got a sharecropper's breakfast.

Now it has become readily apparent to me from reading these posts, that the Southern way of eatin' has made it's way north.  I know this because when Sherman came through raiding, they took about every bit to eat people had, but they left the dried peas considering them unfit to eat.  They also would not eat yellow meal cornbread.  We had to live on that stuff here until after reconstruction, so it became regular fare, but it was anyway.
 
So now I'm learning that grits, peas and corn bread are migrating.  That explains why you yankee fella's have gotten smarter over the years.
 
Now to clear up that speech impediment I've noticed many of you have, you need to eat greens on a regular basis;  collard greens, turnip greens, and some mustard thrown in.  Then you might begin to talk like regular folk.
 
Now Dee, you have a little task ahead of you down there in Tejas.  Not too awful long ago I was in the DFW area near the airport, and stopped in a BBQ restaurant attached to a great big old Bass Pro Shop.  I ordered my barbeque with sweet tea, and the little waitress with the New England accent told me they only had raspberry tea sweetened.  RASPBERRY TEA?  When I told her it was a law that all secesh states serve sugar sweetened iced tea, I though she was gonna' have me thrown out.  She got quite belligerent!  So when you get the time, spread the word around that area.  And get that RASPBERRY tea off the menu..... :o
