Pickled Eggs again
« on: June 04, 2021, 03:34:31 PM »
I'm still looking for that pickled
egg recipe that is good tasting
and neither sweet nor sour nor
bitter.
Don't/won't be using pickle juice,
beet juice, apple cider vinegar,
Molten lava- hot peppers, or
cinnamon sticks, or Tony's,
or any ingredients that require a
lengthy search through numerous
stores/websites to find.
I know it's possible, I've just
haven't been successful YET
Thanks for looking  :)

I don't care for the super hot stuff
that burns out the o-ring, but I don't
mind some spice.

The eggs are one thing I've not been
able to get right. I've tried lots of
different recipes, but I haven't found
the one that tastes right to me.
I've had some commercial ones that
I thought were pretty good, but I've not
been able to duplicate it.
Some people really love some of the
ones I've tried, but they're either too
sour or too sweet or too spicy or too
something that I don't like at all.
I've got to where I only make a few
at the time to keep from having to
throw away 11 formerly decent eggs.

My great grandmother owned and operated a bar in West Virginia. She had a large jar of pickled eggs on the counter and sold them to patrons. Her recipe she would probably divulge butt being a horny old lady the price may be more than you are willing or able to pay...

Those couple I made from this
last try were pretty good.
I was able to eat them and not
have to spit anything out or
throw anything away.
Made a few more today to
make sure of the recipe

So far it's:
White vinegar
Water
Salt
Sugar
Picking spice
Onion slices
Dill

I put a little jalapeno in too
this time

The ones I’ve seen and ate were red. Beet root powder maybe. Some recipes call for adding a can of beets. Pour the juice in and heat then add the beets to the mix and pour in with the (peeled eggs). Sorry had to add that as I had a friend smoke a turkey once and did not remove the organ pack from the cavity or the neck and when he opened the lid it smelled like road kill. He ate it. I passed. Have not checked but when my Grandmother made pickles or pickled green tomatoes (mmm boy) she would add a bunch of garlic cloves and they were great...

Try cutting down on the distilled vinegar, it's way too harsh all on it's own.  When I make pickled carrots, I find going with 1/4 distilled and 3/4 red or white wine vinegar the taste has just enough bite.

I've never had a pickled egg and I'm not sure if I'll ever get around to trying one but quick pickled vegetables are great.  Pickled carrots and scallions are my favorite but my mother loved pickled beets and string beans.  I've helped my sister pickle beets but I won't eat them, yuck....

Try cutting down on the distilled vinegar. . .

I do, with water.

Just my personal taste, I can't
handle different wine and flavored
vinegars.  I use balsamic for about
2 spoonfuls in 2 dishes I make every
now and then, but not very often.

I like classic pickled eggs like those served at taverns across Northern Wisconsin and Michigan's Upper Peninsula. I was always put off by sweet or red beet juice eggs. Keep it simple. My recipe includes 2 parts white vinegar to 1 part water, jarred or canned pickled jalapeno dump the juice in from the can also, sliced onion, generous pickling salt and black pepper, minced garlic, a bay leaf or two, and crushed red pepper if you fancy. Give them about a week, tipping the jar once a day.

Bay leaf is probably what I'm
missing
Dill is what the last recipe I'm
trying specified.  It's pretty close,
but not exactly on target

These last I made were pretty good
and although they didn't look like I
wanted were very edible.
I had stopped earlier on the way
back here for bread and a couple
of small things, and looked for
some bay leaves to try the ^ ^ recipe
posted up there. All the packages
they had were fragments with a
few stems mixed in. I've never
seen a package of bay leaves
with stems. I guess that's a
ploy to get the weight of the
package up and not have to
give the customer everything he
paid for and rid theirselves of
trash that would have to be
disposed of, kinda like how
they pack bone and fat and
frozen water in meat nowadays

I don’t much care for pickled anything. I just fry my eggs and eat them with sautéed jalipenos or Some hot sauce that dosent have vinegar base.

I know we are talking pickled eggs but in the pickled things Beets are my choice. Never tried any eggs but have seen them for years in old markets and some bars.

The most of what I consume is
cucumber pickles, but I've also had
and made the pickled hot dogs and
sausages and the carrots and many
peppers. The peppers seem to have
been invented with vinegar in mind.

I've had commercially made pickled
eggs that were really good, but I've
never been able to reproduce that
particular flavor I'm looking for
on my own. I'm getting close, but
it's still not there. There's some
something that I'm leaving out, but
i don't know what it is.
Hopefully, I'll figure it out while I'm
still physically able to cook and eat
things other than Ensure and
laxatives

What I do is mix everything up in a bowl except what I wont to pickle, taste it and when it is just to my taste I add the whatever I am pickling and that has worked pretty well for me but as always sometimes things change a little, very hard to get it all just right but keep at it you will get it right sooner or later.
