wish i had a big vertical stuffer. Mines just a 5lb cheap one from gander mountain. Pain in the but when your doing summer sausage. You have to stop and fill it after about a stick and a half. Id love a 20lb vertical. Hate to spend the money though as i dont know if we are going to be doing crop damages shooting again.

Made some bacon wrapped wild turkey breast poppers last night and cooked them in the air fryer, excellent!  Cooked very quickly, about 10 minutes so bacon was perfect and turkey was nice and moist not over done.  The trick to cooking low fat meats is to not overcook.

not supper but for lunch had the leftover chicken fried pork loin cube steak on a burger bun with some cheese and mayo. Pretty darned good.

I bought two loins. cut them across the grain about a inch thick and ran them through the cuber attachment for my grinder. They held together fine. I then seasoned them with salt, garlic powder and montreal steak seasoning and pushed them into flour like i do venison cubed. Fried it to a nice brown (light brown so i didnt overcook them. They tuned out great.
I'm glad they were able to be cubed.
Cubing does make meat more tender and sets it up to be floured and fried.

I might just look on Amazon and check out cubers. :)
I mentioned to Nancy that I was looking at cubers and she said you already have one.

cuber works much better then a hammer. Its about the difference in framing a house with a hammer or using my Paslode. No matter how much you hammer you wont get them as tender as the cuber does.

True, but it does a good job flattening chicken breast for frying.
For cube steak, I generally pick out a nice top round and punch the buzzer above the meat case and a butcher come out, takes the steak, and brings it back cubed.
I tried using "cube steak" that was already done but I thing they use scraps to make it. :)

And, I buy tenderloins instead of chops and the hammer does a good job on them.

Cube steak, home made or boughten, it has been a long, long, long time since I have had any.
Ma used to buy it , fairly often ,and she would create some at home about as often; I still have the hammer and thinking of this, when I get home, I am gonna dig out that green hammer and make myself some.

Never though cube steak would be nostalgic to me. 8)

I got introduced to cube steaks by my buddy i crop damage shoot with. First year i did it I was over at his house and he had a hand crank cuber set up and was making them. I probably hadnt eatin cube steaks but once or twice when i was young. I asked him why he did it and he asked me what i did with my marginal cuts. I told him i either can them or make burger. He gave me a couple packs to try and told me about chicken frying it and i havent canned venison since. On a good year id put up probably 75 to a 100lbs of cube steak. We eat it chicken fried (mostly) on the grill with cheese on it on top of speggetti in stroganoff ect. Heck it even works good as a burger.

I used to eat fish sticks quite often. Havent in years and honestly i dont mind them and dont know why i havent bought any recently.

I have found, even at fast food, the person who does the cooking, or the manager can make a Huge difference in quality.
I had one in Superior , Wisc. decades back where the bun was truly toasted and the burger was hot, not warm but hot.

Reheated cheesy potatoes last night.

Fish sticks are fairly scarce around here
for whatever reason. The closest store,
an Aldi, doesn't even carry them anymore.
They do have expensive slabs of bright
red salmon like you would slice paper thin
to go with wine and cheese for a yuppie brunch.
It's funny though since border jumpers
don't have brunch or eat salmon or stollen
or any of the european things they sell.
I have to drive extra miles to find fishsticks.
Tater tots have also been scarce.
I like fishsticks since they cook up quickly
and thoroughly and have the crunchy
outside like I prefer. They're still priced
fairly reasonably

Soaked chicken tenderloin in salt water for a couple days, cleaned it up and cut into chunks, rolled in all purpose flour then egg wash and rolled in white lily flour and deep fried for about 5 mins. I had mine with white rice and broccoli. Sauce was a combination of hot sauce, barbecue and sweet chili. Mmm boy. Tonight? Whatever I can scavenge from the fridge as there are plenty of leftovers:)

i was going to make home made mac and cheese but the knee hurt so bad i couldnt hardly stand so it was a subway roast beef.

Ol' time southwest staple last night. Cornbread, blackeyed peas, and turnip greens with Tapely's sprinkled on them. The cornbread was so good I had another slice for desert. I just added butter and syrup.

Many years ago my brother in Illinois had a small doe made into breakfast sausage with pork added for fat, and it was superb.
