A 12 minute video, teaching much about canned food, starting with corned beef.  Well worth learning and storing away in the memory bank..

actually did sone very rare last night. Went out to eat. they said a mass for my dad and ma at church in my home town yesterday so we took a ride and went to church there. Afterward myself and two sisters and are spouses went to a restaurant that specializes in ribs. So i ordered some shrimp alfredo and a 1/4 rack of ribs. The ribs were excellent but that shrimp alfredo was out of this world good. Best alfredo of any kind i ever ate. Always though the olive garden was great but this was even better. Big whole shrimp and lots of them. Big enough plate that i honestly hardly ate and of the ribs. Dog was happy about that when we got home.

Last night it was New Mexico green chilie chicken potato soup. You make the soup with diced potatoes, tomatoes, whole grain corn, shredded chicken breast and add the seasoning mix. Our son ordered the mix online and it is good. I like it over crumbled saltine crackers.

Cooked some prime sirloin steaks over Lilac coals; only had white rice with it but with a little seasoned salt all that was needed.

Good video.
I like corned beef, spam, deviled ham, potted meat, and when I spent a year in Oregon I ate a lot of canned beef tongue.

Up into my twenties I ate a lot of that and liked it; have not had spam in at least twenty years and deviled probably in forty. :(

The great value version of spam is as good or better than the real thing.

Bob;  I have some Lilac to cut for next winter fireplace.  Does lilac produce a notable aroma?

Yes it does but the younger the more scent you get and it smell wonderful; I have found flowering trees and bushed make the best coals for cooking.

My stepdad would make it and I never saw him boil it and he did not own a pressure cooker. Being a true Italian he knew how to make the tough cuts of meat...

Well I would error on the side of guessing that he boiled it, chilled it, pealed it and then fried it.  If you just fried a beef tongue it would be like chewing on a piece of innertube.  It is excellent when cooked correctly and obviously he knew what he was doing.  Tongue is my favorite taco meat and also for other Mexican dishes.

Probably so... Since he is gone I have lost another source...

The way I've been told to prepare
tongue is to put it over hot coals
or in a broiler and get the outer
skin/membrane blistered so as
to facilitate easy removal

Had some leftover beef/mushroom
gravy over rice and a portion of
mixed vegetables with a hunk of
skillet bread for a scooper

Sure would like to make up a
pan of cornbread, but I sure
wouldn't want to touch the knob
on the oven with it this humid

I do my cooking outside in the summer. I have a 2 burner stove and a grill. With some care you can bake on a grill, I put the pan on the short top shelf and support the other end with a brick on its side.

Last night had smoked venison shoulder topped with sautéed ramps and asparagus, potato and ramp soup.  Man it was good! I should have taken a picture, it was worthy...

Three boxes of white rice, with season packets from two different brands; two are white/wild rice and the other is garlic/ mushroom sauce.

Boiled them up and dumped two cans ,again two brands, of sliced chicken in, good stuff.

Last night it was Texas BBQ, whole kernel corn, and mashed potatoes. It was one of those little frozen things you stick in the microwave. It wasn't bad but I am pretty sure the company that made this has never eaten any Texas BBQ.
