Fried rice

I am on a quest for good fried rice. Does anyone air dry their rice before frying? My fried rice always is to moist and sticky. What am I missing? My plan is to add the rice at the end with no sauces. Hell, I’ve tried everything else...

I only have two sources of GOOD fried rice and they are restaurants.
I've tried to cook it at home and failed miserably.

Probably, one of the restaurants where I get good "flied lice" is a takeout place.

My wife and I got the J&J shot because our favorite pastime required it.
We spend lots of time on cruise ships and were not going to let a shot stand between us and a wonderful time.

I believe most fetal cells today in reputable labs come from umbilical cord blood which gives the same results.
If abortion is eliminated in most states, all labs will use umbilical blood.

Best way I've found is to wash the rice a couple of times after cooking to remove the excess starch.  Then drain very well and put in fridge to dry a bit through evaporation.  Works pretty well.  Your rice won't clump when you fry it.

Yes, a long time ago for sure, but I refuse to have anything to do with it anyway.  I don't care that others do, it is their choice, but it was enough to submit for a waiver to the mandate I faced at my workplace.

My wife and I are retired so we had no mandate like that and would have chosen to not get the jab, but we travel a lot and cruise ships required it so we chose the one-and-done shot.
The main thing I’ve heard about the jabs is, they are not very effective.
All the conspiracies floating around don’t worry me, as they are just hot air.
None of our friends who got the various shots had any reaction to them.

Over easy is my favorite.
Warm runny egg yolk is the best flavor in the world.
Some of the suggestions here make me want to try fried rice again because it's great if fixed right.

We eat it with a traditional Chinese or Japanese entree.    Pork, chicken, or shrimp etc.
Or, it can be the whole meal.  If fixed right it's delicious.
But don't buy the pouches of so-called fried rice in the grocery store, it's awful.
